Sweet Fancy Moses! The whole meal was fabulous but I think we all would've been happy with giant vats of the squash soup and the amish milk bread. But let me start from the top.
Wait staff was quick, attentive, gave good recommendations and was funny.
Amuse bouche of asparagus pannacotta with pancetta. Wow. Not exactly to my taste (pregnancy has screwed with my taste buds) but the rest of the group enjoyed it. And the milk bread and salted butter. We almost took the server's hand off when he tried to take the bread. Rave reviews for the deconstructed wedge salad. Intermezzo of the squash soup which we wished for more. Three of us got steak with assorted sides. Cooked to desired temp including my well done. Succulent and tasty. My sister got the mac and cheese on recommendation from server. Points to him. Dessert was the trio of creme brulee and the sorbets of prickly pear and honey kiwi. Suffice it to say both plates were completely cleaned.
Worth the price for sure. Great views of the golf course and fountains at night. Beautiful space that is styled after FallingWater. Lovely all the way around.
Very pleasant atmosphere with exceptional service. Â Window seats are the best. Reservations suggested. Â Most items on the menu are superb! Â Can't go wrong with any of them.
Wine selection is limited, but then again I am spoiled by living in Napa Valley area of CA where there is a tremendous selection of fine wines. Â I did order an Australian cab and it was wonderful! Â

We visited here Sunday night. I agree with other reviewers that the lobster bisque is delicious and unique. Definitely get this if you visit. Also, the amish bread was very soft and good as well. However, this is a steak house, and the steak was disappointing. Both my husband and I ordered the dry aged new york strip. Unfortunately, my cut came out overcooked, and both of us found the meat dry and tasteless (not juicy at all). The mushroom strudel I ordered as a side was OK. As with all of the Nemacolin properties, the service was outstanding.
Review Source:My husband and I don't really go to restaurants like this, so Aqueous was quite a treat. Â We went the weekend of my birthday. Â I will start off with the 2 reasons that I give this place 4 stars instead of 5. Â First, it is impossible to find if you're not familiar with Nemacolin. Â We were not staying on the property, and there is no address that you can put into GPS that will take you there. Â And talking to anyone on the phone is ridiculous (the answering service was downright rude at one point) - we ended up being an hour late for our reservation (they were fine with that luckily). Â The other reason that I didn't give Aqueous 5 stars is that I was not impressed with dessert (that doesn't mean that my husband wasn't - he scarfed the entire piece of cheesecake). Â I thought the cheesecake was not sweet enough and that the chocolate torte was too spongy.
Now onto the good and great... the bread was soooo good. Â The butter, goat cheese, and homemade apricot jam were also delicious. Â The crab-2-ways was some of the best crab that I've ever had - very creative dish with beautiful presentation. Â The salad (artisan greens) was awesome... I'm a sucker for anything that has chevre obviously, and the dressing was tasty. Â Finally the entrees were also overall great. Â Two (small) complaints: my husband's potatoes were over-salted (he really enjoyed his strip steak though), and I really wish I could have picked my accompaniments... apparently I am not a fan of white turnips (I had the salmon, and I really only ate the salmon; I thought everything else on the plate was kind of gross).
The service was also fantastic. Â After diving into my salmon, I realized that it as very undercooked for my liking (room temp. in the middle). Â I asked for it to be cooked through a little more, and that wasn't a problem. Â There were several "specialties" brought over to us from the chef. Â The waiters (yes there were 2), were very proper and kind. Â
The facilities are beautiful... if you can find the place.
This is one of the best meals I've had in a long time! Â I always ask the server for their favorite recommendations. Â She recommended the Veal, which I've NEVER had before and it was so delicious!! Â Also had the pear and camembert appetizer. Â The food had such great flavor. Â What makes a restaurant get 5 stars is definitely the service and our server, Carolyn, was absolutely awesome. Â She was such a pleasure and you could tell she had a love for the food she was serving. Â If you are ever in this area, you've got to check out this restaurant.
Review Source:Our dinner at Aqueous started out fine, then went downhill until the entree.  My pre-dinner Manhattan was outstanding.  I especially liked the bartender using black cherries.  Yum.  The bread course was again outstanding.  I love Amish milk bread, and the home-made butter with sea salt was good.  Then came the appetizer;  ostensibly ahi tuna tartar with salmon roe, cucumber, avocado, and peach ginger chutney.  I am a big fan of tuna tartar, and I expect to taste the tuna.  Not this tuna.  There were so many things going on with this dish that the delicate tuna flavor was missing.  Maybe the tuna was missing.  The salmon roe was predominant, so maybe they should just rename the dish.  Next came the baby romaine lettuce salad, served with "crispy fried poached egg" (meh), shaved pecorino, and asiago anchovy dressing.  Beyond the taste of the romaine this salad had absolutely NO flavor.  No asiago, no anchovy. Nada.  Bleh!  The filet entree was fine, but not anything special.  What you'd expect in a local steakhouse.  How this place earned the  prestigious Forbes Travel Guide, Four-Star Award 2012 remains a mystery.  We passed on dessert, heading straight for the Cigar bar.
This was our first of three dinners at Nemacolin, and it didn't bode well for the remaining two, Autumn and Lautrec. Â Don't despair, dear reader. Â Things will get better.
More often than not, I'm unimpressed by most steakhouses I try. Generally, steakhouses put out something resembling a decent product, but rarely worthy of the price they are charging. $40 or $50 for a steak...sure. It better be incredible. Â Aqueous was incredible. They nailed it. From the impeccable service, to a perfectly crafted martini and ultimately a memorable filet, Aqueous delivered. Recommended.

The amuse bouche was a mini lobster roll, which was as cute as it was delicious. Kudos to whoever thought that one up.
We shared a "Tuna Two Ways" starter: seared tuna over sticky rice plus tuna tartare. Being so far from the water I had my doubts about the tuna but it was perfectly fresh. The two presentations were both outstanding. The seared tuna had just enough Japanese influence to be interesting, while the tuna tartare was flat out delicious.
Before the mains we were served a demitasse of gazpacho. I don't know why it wasn't on the menu, because it was excellent.
My wife had a filet and I had a strip steak. Both came with an "opportunity", which most of us call a side dish. I'm happy to ignore the menu BS because most steakhouses are completely a la carte. So, Aqueous had the "opportunity" to charge an extra $10 each but didn't. No complaints here!
My wife is an eternal optimist when it comes to steak. She almost always orders a filet and almost always is disappointed. Not tonight! Her filet was big (12 oz vs. the usual 8) and perfectly done, soft but not mushy. My sirloin was excellent, on a par with most of the better steak places. I go for the strip because I prefer the texture to that of filet, and I wasn't disappointed. My wife thought her filet was the best she had ever eaten. I'll say my strip was on a par with Ruth's Chris, Mortons et al and was surpassed only by places like Peter Luger. Obviously, extra points for including the side dish. We didn't even look at the dessert menu, although the chocolate truffles after the meal were superb.
You can't eat the service or decor, but both were outstanding. We can't wait to go back to Aqueous and recommend it highly to anyone who wants a top tier steakhouse experience and finds themselves outside of Pittsburgh.
My only quibble is with the wine list. LIke most steakhouses, the wine list at Aqueous was rapacious. Unlike Autumn, there were few choices below $100. That isn't right. Also unlike Autumn, Aqueous didn't have a sommelier. That's too bad, since the sommelier at Autumn was excellent, but there wasn't a lot to recommend in the $50-75 range - certainly precious little from France, Italy or the US. Still, we managed to find a very good Australian at a reasonable price.
I get that Aqueous is a steakhouse, but the excessively brutal wine list is not a feature that up and coming steak restaurants should emulate. Add some bottles at sub-expense account prices and you will make friends - and customers - for life.
I had an a poor meal here at this 4 star restaurant. The Amish bread and the macaroni and cheese were dry. I ordered a steak medium well and it was rare.I waited 10 minutes to find my waitress. I sent my steak back and it was missing for 20 minutes. It arrived charred,  like it was dropped in the coals. We also had spinach as a side and it was very salty. My husband ordered a lobster and it smelled fishy. The waitress offered me free dessert, but I declined. I would not recommend this restaurant. It is not worth the money. We ate at the Tavern restaurant at the resort  after and enjoyed a wonderful burger as I was still hungry.
Review Source:My wife and I ate here once for breakfast and once for dinner during our stay at Nemacolin and both meals were absolutely delicious. At both meals, the chef gave us something complimentary, which was a really nice touch. For dinner, we had the filets, and it was the best steak I've ever had, and we've eaten at a few pretty high-end steak places. The views are wonderful, but during sunset, the sun can be a hinderance to you enjoying your dinner depending on where you are sitting in the restaurant. You might want to bring some sunglasses just in case as there are no window coverings on the windows.
Review Source:Located on the Nemacolin Resort property, this restaurant is located at the back of the property. Easy to get lost at night with the poor signage, so make sure you have good directions and locate the restaurant on their website before you depart.
Spacious and ostentatious space, expectations were set very high when we were seated. Design is clearly inspired by F.L. Wright's Prairie School, an ode to nearby Fallingwater and Kentuck Knob. It is a spectacular venue.
Complimentary bread basket was delicious. various fresh breads served with a salty butter and cranberry spread. Several menu specials. We ordered fish and a steak, also brought a complimentary appetizer (mushroom thing). I don't remember what the fish was exactly, but I remember it was served with some Asian flavors. Very well done. It was tasty and well received. Ordered the steak prepared medium well, however it was clearly served well done. Really dampened the flavor, which was good. Curious, I noticed another patron from the reviews had the same issue. Might be a communication problem.
It was the little extras that bumped Aqueous from 3 to 4 stars. Couple of items for improvement. First, steak needed to be served to order. I'm certain they would have corrected the order if I had asked, I just didn't want to bother. Also, the jazz music playing really wasn't dinner music. Simply too intense for a fine dining setting. Perfectly acceptable in a lounge, but not a restaurant.
It would not be outlandish for me to state that this was by far the best dining experience I have ever had.
My husband and I went to Nemacolin for our one year wedding anniversary and ate dinner at Aqueous. The staff is unbelievably attentive, professional, knowledgeable, friendly, and polite. The restaurant itself is beautiful, clean, and calm. The food was intoxicating.
We tried the heirloom tomato and housegarden salad and the scallop appetizer, and for entrees we had the wild mushroom risotto and the bone-in ribeye and fois gras  with cheddar grits. In between courses they brought us complimentary teasers of the spinach and gorgonzola cheese brulee and a chilled squash/red pepper bisque. Every bite of every dish was mind-blowing. I cannot believe the flavors that came out of every mouthful. I wanted to go back into their kitchen and personally thank the chef for such an outstanding dining experience.
For dessert (we barely had room, but the main courses were so outstanding we couldn't pass up the opportunity), my husband had the lemon cheesecake and I had the chocolate cake. The chef sent the chocolate cake out with a chunk of chocolate with "Happy Anniversary" printed on it, which was such a nice, personal touch.
I cannot recommend this restaurant enough. It is unbelievable. Aqueous is a restaurant that I MUST come back to again no matter where I live in the country.
The hubby and I came up to Nemacolin for our anniversary and stayed the weekend. While there we tried Aqueous at the resorts third hotel Falling Rock.
Aqueous and Falling Rock are inspired by Frank Llyod Wrights Fallingwater. Earth tones, stone, water, and the clean lines of his architecture echo here.
But the food...! Aqueous is a steak house with hints of seasonal sustainable local foods sprinkled in the menu.
Our wait staff was very knowledgeable and friendly - everybody loved
food and loved talking about it.
We both decided to live it up and have steak. I had a fillet - was a tad closer to rare than medium - but delicious none the less. Signature Mac and Cheese was great. Ahi Tuna Appetizer was delish! Also, they had these wonderful pretzel rolls.
Dessert was good -nothing spectacular with a chocolate cake like offering with peanut butter sauce.
I liked this place alot and it added to the long list of reasons to return to Nemacolin- a five star gem in the Pennsylvanian countryside!
Aqueous is probably my favorite restaurant on Nemacolin's property.
Full disclosure: I used to work there, but recently returned as a guest on a biz trip.
Instead of locking in a reservation inside Aqueous, my co-workers and I sat on the terrace outside Amber Bar, but ate from the Aqueous menu. We had the 44 oz. Porterhouse steaks w/ two sides: the Signature Macaroni and the Potato Croquettes. We also got the Seafood stand and Risotto as appetizers.
One Porterhouse we ordered was overcooked (requested medium) and had to be returned. While that was an inconvenience it didn't kill the whole night.
Since I used to work at Nemacolin, I have had the experience of eating at Aqueous on two or three occasions, but those occasions were with different chefs and different menus.
That said, my first experience at Aqueous as a guest at Nemacolin went just fine, and if I get the chance to return to Nemacolin as a guest again, I would probably look forward to the opportunity to dine there.
They did something new with lobster bisque.
I order lobster bisque practically everywhere I go and I have never had It served inside a light and flaky pastry shell before.
It was basically lobster bisque pot pie.
Quiet good.
My father's lamb was good, and the macaroni and cheese the waitress recommended was creamy and had wonderful texture but a little bland/mild for me.
The restaurant is located inside Falling Rock, one of the hotels on the Nemacolin resort property. The terrace overlooks the beautiful golf course and the hotel building itself is stunning, built in a Frank Lloyd Wright architectural style.
Why 4 instead of 5 stars?
They claimed to have no reservations available for that evening, however the terrace seating was first come first serve. With the beautiful weather, we would have chosen that anyways, but throughout our entire meal, we could see the empty tables inside. Perhaps they should take a closer look at their reservation system.
