This place used to be called the Boudin and Cracklin Express. It is now called Hebert's Boudin and Cracklins. It has a sister store in Henderson, LA which also used to be Boudin and Cracklin Express. Â
I am not particularly fond of the boudin. A wee bit too spicy and kind of mushy, lacking texture and consistency. But I could give this place five stars just on the merits of their cracklins. Absolutely the best anywhere I have eaten, and I have eaten at many places. I guess there may be better somewhere... I would like to know.
I recently stopped by and it is now called Hebert's. Â I ordered some Boudin and Cracklins. Â To me, the cracklins were not as good. Â They seemed extra salty this time.
As for the boudin, I bought 6 links. Â We tried it and didn't think it was a very good link of boudin. Â I don't know if it was too much cayenne, but not the same as before.
