I was hovering between 2 and 3 stars on this one, because looking at other reviews, maybe I was just there on an off day and my experience isn't typical. Â I stopped here with a friend before going over to Tripp's Ultimate Comedy Club and Humor Bar, a new comedy club which took the place of the Bistro underneath city hall, to have a drink and kill some time. Â I've wanted to hit this place for some time, have heard about it and drive past it all the time. Â First, it was uncomfortably hot in this place, almost to the point of breaking out a sweat and then I ordered a beer which was warm, ouch, the double whammy there folks! Â I don't expect perfection, I worked in the food service industry for eight years and know that things go wrong that are out of your control but at least acknowledge the problem and let me know you care a little about my experience and impression. Â The service was certainly inattentive, unfriendly, borderline rude even, staff couldn't care less if we were there. Â Asked if we could order food at the bar, "Yeah." Â Uh, how about asking us if we would like a menu you think? Â We had to ask for everything, that on top of being kept waiting when we sat down at the bar. Â This is a place I might go back to, but would be wary and willing to bail quick. Plus, 5.50 for a small glass of Sunner Kolsch is kinda steep, would mind so much if we would have been treated well though.
Review Source:My husband and I came here on a Friday afternoon while exploring in New Braunfels. Â I tried to check in on Yelp, but the application would not let me leave San Antonio. :(
Anyhow, as soon as we walked in a very cheery staff member told us to, "Make ourselves at home." Â We bellied up to the bar since we were only there for a few minutes and the patrons there were very friendly. Â They told us where to go on the river, shows, restaurants, etc. Â
We drank the Faust IPA which we both loved because it was not too filly or hoppy. Â We had a bratwurst puff pastry with their homemade chips. Â I am not a huge sausage fan but this sausage was really good. Â It wasn't very greasy and surprisingly lighter than most sausages. It paired really well with the IPA. Â I normally don't like to drink beer with my food but this combination really went together. Â My husband and I both agreed. Â We split the meal and it filled us up nicely without being too filling. Â We are still talking about it three days later and will head back up there soon.
I just hope Yelp lets me check in next time.
Finding a good bar + good food is a bit of a trick in downtown New Braunfels. But Faust pulls it off in spades!
The small plates are way above the average bar food appetizers. Pierogies? Jerk Chicken Wings? Ahi Tuna? And all of it was prepared expertly, clearly not some reheated frozen stuff. Extra touches like sauce, toppings and seasoning really pushed them over the edge.
We almost exclusvly went for burgers and sandwiches, all of which were great. The burgers were thick, juicy and extra greasy in a good way. The Reuben was stacked high with the 'kraut and done in a traditional style (aka not greasy pan fried). We're going to have to save the hot dog samplers for another trip.
Topping it all off was some fine beer service that's a little bit different from other microbrews. As in it's pulled fresh from their tap system and not canned, bottled or stored when you drink it there. It gives you the brewery tour experience from the comfort of your own seat.
A really great time and worth walking a couple blocks. Can't wait to go back!
Great stop on our route driving north to Austin! The brewery's in back of the hotel, with a nice bar and plenty of seating. We had the seasonal Mocha Stout--and it's safe to say, it was the best Mocha Stout we've ever had. So delicious, so creamy, it was like having a delectable dessert. YUM.
Review Source:Stayed at the hotel in December for two nights and visited the bar each night. Great local crowed and great home brewed beer. Food was excellent. Homemade chips are a must. Watch out for the german nachos. Unless your really hungry, its best to do like my ex g/f did, share it with a football team. I love those nachos, but not her. Nope definitely not her.

The hotel is alright. Â Here are some of my observations that may or may not be helpful:
-There is one working ice machine.
-The building appears to have maintained its historic appearance.
-I think there are ghost floating around in there, but the vibe was good.
-Laid back atmosphere there for sure. Â The staff was friendly, but they will not kiss your ....
-The European room is definitely "European", but it is plenty good for the light traveler.
For the casual tourist and beer traveler, this is a good spot.
Faust beer was not the greatest, no real hop flavor, and had a strange lingering aftertaste. Â We had both the ipa and pale ale, we did not eat there. The bartender was a smart alec. Â Ambiance is a very nicely preserved old hotel. Â Personally I found the Phoenix Saloon a much better option
Review Source:The bar in the historic Faust Hotel is actually a brewpub. Not only does this place have great house-made beers, they have a very nice food menu also. The German nachos are one of my favorites. The chips in general are fantastic, homemade and half french fry half 'chip.' Ray makes a terrific Altbier as well as some other supremely drinkable light ales and lagers with full flavor. I wish this place was a bit closer, but it's really a short drive after you get outta SA.
Review Source:I love a good IPA so Faust Brewing won my heart over right away. Â These days I've got to be careful not to drink too much. Â I'm taking antidepressants to help me over the hump of my divorce. Â Turns out too many IPA's don't mix so well with my meds! Â JAYSUS!! Â LOL! Â But seriously this place is cool. Â I met a blind date here and we had a good time. Â The atmosphere is laid back and it was easy to talk and get to know one another. Â I left the brewery questioning if I'm at a place emotionally to make a true connection with anyone. Â But then I figured as long as I don't rush into anything I'm fine. Â Or maybe I just need to be on my own for a while. Â But on a date or on my own Faust Brewery works for me.
Review Source:Well a group of friends stopped off here after a long day of floating the river. Â It was pretty late so the actual resturant was closed, but we did get a chance to eat in the bar area. Â I must mention that the normal dinning room looked wonderful and nice.
Service was a tad bit slow, but i noticed that the waitress was over worked with a few other tables. Â Nothing really to complain about and she was very nice. Â Food was good and hit the spot. Â I know some other friends order the nachoes, but i guess they didn't notice that they were "german nachoes". Â I personally liked them, they did not. Â Afterwards some friends decided to leave, but the rest of us posted up at the bar.
Fully stocked bar with a nice selection of every kind of liquor. Â Bartender was friendly and made small talk. Â As the night went along business started to pick up and service once again became a little slow. Â The bartender noticed this and made up by giving us a little extra pour on our drinks. Â He actually more than made up for it! Â He made an excellent dirty martini i might add. Â FIve out of five stars for the bartender, cool guy.
So you might be wondering what i thought of the beers, as this is a brewing company.... Well the wheat beer really did nothing for me. Â I understand it was a lite sytle, but it just had nothing to offer me. Â The dark ale on the other hand was quite good. Â I'm not really a dark beer kind of guy, but with beers like this i'm finding that i enjoy them more and more often. Â
So with that being said this place really falls on 3 to 4 stars, but my experience with a few of the people made it a 4 star review. Â I think this place could have a lot to offer that i didn't get to experience and i hope to go back and stay there.
We stayed in the hotel and visited the bar both nights. Since we were there during the week it wasn't very busy. I enjoyed their beer and my boyfriend was happy with his drink too. Their little bar is cosy and laid back & a great place to relax.
The first night I wasn't too sure how their food would be but the chips and salsa and guacamole we ordered was delicious and fancy and fresh -- not generic at all. Judging from the quality of the home made guac and salsa, I would expect all their food to be fabulous.
We decided to stay at this hotel because we are beer nerds. Our anniversary was meant to be a "beercation," so I included a few nights at the Faust on our itenerary. I thought that the staff were very friendly and helpful. We were there during the middle of the week, so there wasn't a lot of noise or traffic to compete with. Our room looked out over one of the main streets in New Braunfels, but my husband, who is a light sleeper, had no complaints.
The hotel is close enough to Schlitterbahn that we decided to walk there and used the park's shuttle to reach the original park. The hotel is also close to several other bars and restaurants in New Braunfels.
I had my wedding at the Faust on May 29. It was amazing and the night just flew by.
I can say that Doug has been the most helpful and knowledgeable person in planning my wedding. He helped us pick out our invitations, food, drinks, cocktail hour, wording for invites and other things, how to decorate the ballroom, and gave us many suggestions on vendors to use for extra linens, decorations, the cake, flowers, etc. His assistant Suzy gave us so many ideas as well and helped us keep track of it all. They set up a food tasting session for us at the bar and even set aside a block of rooms for our guests at a majorly discounted rate - almost half off their going rate for that weekend!
The guys at the front desk have been more than helpful as well scheduling our payments and helping us with other ideas.
If I could start all over in planning I would choose The Faust again!
While we did not actually stay in the hotel, I can attest to the excellent customer (stranger off the street) service. We were stranded in New Braunfels after a day of tubing-- our drunk friends took the shuttle back to Austin-- and we didn't have phones or anyones numbers. We were dressed like sh** because we had been on the river all day, and the gentleman at the front desk took great care of us. He called every cab company in a 20 mile area and successfully got us a cab back to Austin (an hour away).
He didn't have to help us at all, in fact we were probably a total embarrassment to have in the lobby! We are really grateful to him, and thought the Faust Hotel was just beautiful. It is an historic hotel, and has been lovingly restored. There is a brewing company and restaurant there that looked nice, and live music on the weekends.
