Pancho's Mexican Restaurant

Just had lunch at Mr Pancho's.  I can't believe that this place has not been reviewed yet!  We had the Ranchero Special lunch size portion which was the daily special for 5.99.  The portion size was huge.  The chicken was cooked perfectly and the vegetables ( onions, green peppers) were grilled and browned to bring out the natural flavor.  There was plenty of delicious white cheese sauce covering the entire dish unlike some Mexican restaurants who only put a small amount of sauce on the rice.   We also got a bowl of the white cheese sauce.  It was slightly thin but very flavorful.  My husband really liked the green sauce but I prefer a green sauce with a little more sweetness, but with that being said it was still very good.   The salsa was just ok.  I feel it needed cilantro and it would have been much better, but that is a matter of preference.  The chips were thin and crispy just the way I like them!   I would highly recommend the ranchero special and look forward to trying other dishes when we are back in Nashville.
