I have a weakness for BBQ.  I was working in Selmer, and staying in Corinth, and driving between the two when I saw this pit BBQ just outside of Selmer, TN.  Stopped in the first night and could only get a pork plate; pork, buns, and a couple of sides  They were out of ribs and chicken.  The pork  was tasty, but didn't really have  the smoked flavor I was hoping for.  It's hard to make really bad pork when you cook it slow so I wasn't terribly impressed.  The sauce choices are hot, and sweet.  I tried the hot and it was good, but a little mild for my taste. Â
Back the second night, after calling ahead in the morning to place my order for a rack 'o ribs.  Took them back to the room and they smelled great.  Ribs were tender and fall off the bone, JUST THE WAY I LIKE THEM.  If you like them competition style with a little pull, these might be disappointing.  The glaze provides the sweet, to the pepper on the ribs and it makes for a great taste.  In fact, I liked the glaze the best.  I think it's apricot, with a touch of brown sugar  but it was hard to identify.  Sweet and hot.  Note: they didn't clean the ribs much if at all before putting them on, so the silver skin was still on which is a big minus in my book. Â
I'll leave it to someone else to describe the decor, ambiance, whatever I missed. Â I only here for the BBQ.
