I had the two meat plate. Â The brisket was so dry I was torn between sending it back and never coming back again - I chose the latter. Â I can't believe they served it to me. Â The sausage was fine.
They have this weird requirement that a waitress has to get your drink for you. Â Not only is this inconvenient - I can get my own drink immediately and refill it whenever I want - I am now forced to tip someone and increase the cost of my meal.
I added a star because they had hominy which is something I had never seen at a BBQ joint.
Went to Bubba's today after looking at Bluebonnets in the area. Â Walked in the front door and smelled cigarette smoke. Â A few steps, and smelled a little BBQ smoke. Â After walking in the signs said, please wait to be seated, and self service this way. Â Interesting! Â My husband got a brisket plate and I got a baked potato. Â I tried a bit of the brisket and thought it tasted awful. Â My husband was able to eat it after cutting off the bark. Â I think the bark is usually the best part. Â I don't know what kind of wood they used, but it didn't have a good effect on the brisket. Â The BBQ sauce had way too much vinegar in it. Â Yuck!! Â The potato I got was very dry. Â They put on a little sour cream and a little cheese. Â We won't be back.
Review Source:Crazy. Been there 3 times. Gotten Steak, then Barbecue, then Ribs. I thought the steak was OK for the price (think Golden Corral or Salt Grass), the barbecue was average (Dickeys) Â but then I had the RIBS and they were incredible! Â Some of the best I've ever had! Â Unbelievably tender and fall-off-bone super great. If you're driving from Houston to Dallas this will definitely be your best bet. Â Nice Airplane collection hanging from the ceiling also.

The food? Very very disappointing. The hubby and I had the ribs. Lets just say we would have had a way better meal at Jack in the Box.
The ribs were dry dry dry! I needed a cup of BBQ sauce for each rib. I only ended up eating one rib. My jaw hurt after that so I decided I wouldn't attempt to hurt myself trying to eat them. So I tried my sides. Well the potato salad was okay but my baked beans were colder than the potato salad. (Sure do love me some cold beans...yum.)
I was expecting hot fresh rolls but what we got was even better...sliced bread you can find in at any grocery store.
Can't say I will be back. I'll just stick to Spring Creek Barbecue when it comes to ribs.
Recently had the opportunity to eat at Bubba's in Ennis, TX. Â A week before a wedding I was asked to make reservations there for 35-40 people for a Saturday afternoon, from California. I called and spoke to the manager, Melissa, who was more than helpful. She not only said they could handle our group, but she would schedule 2 extra waitresses to attend to us.
Our group began arriving about 2:45pm and continued to come in to about 3:30, the waitresses, whom I neglected to get their names, were courteous and attentive. The steaks are chosen by the customer and the BBQ is ordered at the counter, in order for everyone to eat at the same time, the waitress came by just before the steaks were coming to the tables to have those having BBQ go to the counter to get it.
When the bill arrived I was shocked--It was about $300 LESS than what I expected, yes, LESS!! As I was leaving the Manager, Melissa, came up to make sure I was satisfied with the service and the food, I certainly assured her I was. If I am ever in Ennis, TX again, I will most certainly stop and eat there again.
Although I live in Austin, TX, my family and I eat here a lot (as in a couple of times a month) because we come up to the area to check on the family farm. Â As a frequent diner, I can say that out of many many visits to Bubba's, I've never had a bad or even mediocre experience with either the food or the waitstaff. Â The BBQ is great--whether brisket, sausage, or ribs, Bubba gives his patrons one of the better Texas BBQ experiences. Â
What may not be expected here is the "regular" food line that features tasty treats like turkey with mashed potatos and gravy, meatloaf, steak, chicken friend steak, shrimp, and catfish. Their yeast rolls are delicious and their homemade ranch dressing makes me wish more places would kick the dressing-in-a-bottle habit. Â They also have a fantastic chocolate cream pie.
We are often there during the after-church sunday rush and as we are a family that includes a wheelchair-bound elder and a rambunctious toddler, they have to work hard to get us a table that fits our needs. Â They always do so promptly and courteously. Â
It might be easy to pass up old Bubba's BBQ in favor of one of the chain restaurants across the highway, but you will be missing a great casual dining experience!
Not for the discerning diner.
I gave this place at least two attempts. Let me highlight the high points:
1 - soft drinks are big
2 - reasonable prices Â
3 - easy interstate on/off
4 - they aren't open 24/7
The restaurant is dated, giving the sense that it may be dirty, but is likely just worn. This place cannot be a goldmine for the owner.
Most of the food is prepared in mass quantities and is under heat lamps. Diners grab a tray and walk through a line, pointing to  what they want to be served. There is menu service available, but the food I ordered might just as well have been prepared yesterday and held under a heat lamp. It had an "old" texture, lacked flavor, and was not of the highest quality cut.
Bottom Line: Do you HAVE to stop in Ennis? If you must, there is no fine dining, but there are at least a couple of better places to eat. I do not recommend eating here.
We stopped by on the way home on 45. Decent road food. They must have listened to previous reviews because the brisket and ribs were well smoked, the sauce was thick and sweet. Veggies were canned- Ranch style beans, corn, green beans, collard greens. The Mac & cheese was gummy and from a mix so we didn't try it. Potato salad & coleslaw looked watery and a little past prime so we skipped that too.
The restaurant could use a good cleaning, the employees weren't very interested in the customers by the time we got there on a slow Sunday night. Nice clean bathrooms though! A plus for travelers. Â HUGE 40oz to-go cups.
My husband says his review would be 2 stars but he is more of a meat-snob than I am.
I could understand Bubba's popularity if it was located in the northeast, but for a Texas bbq joint it was just embarrassing. Â Their secret ingredient appears to be water, because everything was bland and watered down.
The pork ribs were the best item but still a far cry from good bbq. Â They were tender and the meat fell off the bone but that was it. Â There wasn't even a hint of a smoke flavor. Â I thought the bbq sauce could rescue them but it was very weak and contributed nothing to the taste. Â The brisket was bland as well and very fatty. Â The ham was ok but overcooked and dry. Â Luckily the watery bbq sauce was available to rehydrate the ham.
The sausage wasn't bad, but it certainly wasn't anything special. Â The coleslaw was very watery and should be skipped. Â The pinto beans were decent. Â The side of fried okra was pretty good.
We didn't try the steaks, and maybe that is the real reason this place is so popular. Â If you're driving to Dallas or Houston just keep on going, you can pick up something better at a rest stop.
I find this place to be much more of a small town family restaurant, not a BBQ joint. Â It looks to dated form the outside, and not much better on the inside. Â You also deal with alot of the same problems as family restaurants. Â Alot of workers that would rather chat amongst each other than help you. Â And more importantly none of them (even the "manager" I talked to) knew jack shit about BBQ, including their own. Â How hard is it to know how you cook your meat. Â Just let me go look back at your smokers and I will tell you for you. Â
That being said, the pork rib was very good. Â Not the greatest smoke flavor, but very tender and alot of meat. Â Brisket on the other hand was just a bit too chewy and too much fat that was un-rendered. Â Some of the flavor had been cooked out of it and the bark was non-existent. Â Sauce tasted pretty bad, and the sausage was hopefully not homemade. Â It had little flavor, weak casing, and was way to overcooked and hot temperature-wise, while having not kick of spice to it. Â Overall the meats were close to taste-less, and the sauce provided no help.
I expected more by the size of the crowd and their love of advertising themselves with a flashy building and billboards, but sadly it was mediocre at best.
So we came across this restaurant while driving between Dallas and Houston.....
Originally we went to Dallas for a BBQ spot, but it was Sunday and all the BBQ spots seemed to be closed....
So thankfully we found this place to gobble up some Texas BBQ!
I ordered a sliced BBQ sammie with two sides. Â My mother ordered a "small" (which I can't imagine how a large size would be!!! the small size was pretty big) chicken fried steak with 2 sides.
I had to ordered a sweet tea and my mom ordered a lemonade (which was pretty tart!)
All in all, the food was delicious! Â Also, the service was friendly and efficient! Â And we only spent $25 with tip for the two of us!
I enjoyed my Texas BBQ experience! :D
P.S. Â If we had more time, I would have ordered a steak...i think it was pretty cool you can choose your own cut of steak and they grill it....so everything seemed to be made-to-order....like everything should be!!! :D

Their line: you ain't ever sausage a place. Â Right. Â I would never order sausage here again.
The name and pretentiousness of this highway-side BBQ had me skeptical. Â They really like to advertise... something I didn't think Texas Monthly would have liked? Â All that pessimism was pushed aside with a waft of smoky air. Â As I pulled up on the service road, that wood-burning hit me straight in the face. Â I knew I was in for a treat.
Sadly, it's not a traditional BBQ atmosphere as much at it is a family-casual/truck-stop diner. Â The outside pit definitely gives off that true meat ambiance, though. Â No recommendations here, just get everything. Â Oh, but skip the sausage.
I think they cheat on the brisket, because it's about half as thick as normal briskets, so it's really fatty and tender and smoky. Â Delicious, but it could used a tad more smoking to break down the extra fat. Â It's really thin.
The ribs were outstanding. Â Everything you want in a rib: tender, meaty, smoky. Â Those are all the requirements, right?
Pulled pork: good try.... but having it sit in a warming dish smothered in BBQ sauce is not a plus. Â Tasty though. Â It would make a good sandwich. Â Tender, moist, and overly sauced, but that's the only way to keep it from drying out.
Sausage: Meh. Â It's has that processed texture that's really fine and basically feels like any ol' sausage. Â Not bad, but definitely not the best here.
This is definitely my pick for BBQ anywhere NEAR anus, I mean Ennis, Texas. Â I-45 now holds some of my favorite ribs in Texas.
I know being famished from a day of travel improved my outlook when I finally rolled into Bubba's parking lot, but it didn't blind me. It is not the best barbeque I've had. But I think it's the best barbeque I've had in a joint right on the main highway...Two people, dinner for $20, and here's what we got:
The pork ribs were very large, very tender (falling off the bone), with a nice hint of smoke. They had so much meat on them that my equally-famished (and much larger) husband could not finish them. Yay for me, as I got the last rib. My brisket was dry (though flavorful). I'll willing to concede that getting a plate of brisket on a Sunday at a little after 6pm might have had something to do with that.
The day we were there they also had a selection of sausages, beef ribs...my memory's going. They also had steaks in a fridge they'd cook up for you, and advertised a pretty wide selection of fish.
For sides (you get your choice of two with a dinner, plus a roll) we had charro beans, cole slaw, and potato salad. All were tasty, with none of that sugary taste places often resort to. (Man, I hate sugary cole slaw.) As others have mentioned, the condiment table is groaning with a selection of pickles, peppers, salsas, sauces, and a couple of tubs of sliced bread for those of you who can't bear to sop up barbeque sauce on anything more substantial.
The very friendly waitresses kept our tubs of ice tea and lemonade filled, and sweetly brought us two large styrofoam cups filled with tea and lemonade for our drive south. Thank you, Bubba's! We left the lot, stuffed full and happily hydrated.
I drive through Ennis a couple of times a month... see the billboards.. enjoy a good plate of bbq once in awhile. Â Gave it a try on a Saturday night. Â
You walk in and if you want steak, its sitting in a fridge right next to the entrance, pick it out, plop it on a plate and bring it to your table, the waitress will bring it to the kitchen to be cooked. Â Otherwise...it's cafeteria style... kinda. Â I asked for fatty brisket, regular & spicy sausage, and pork ribs (3 meat platter). Â It came with two sides (bbq baked beans, coleslaw, corn, green beans, potato salad, pinto beans). Â I picked the potato salad and the corn (I like starch).
You can get a much condiments as you like ( 2 types of pickles, onions, banana peppers, jalepenos, regular sliced bread and of course bbq sauce).
The pork ribs were very tender, meat fell off the bone, slight hint of smoke...but other than that it was bland. Â Not seasoned.... but I had bbq sauce which was pretty good. Â Brisket nice smoke, tender, and yet again... tasteless. Â It received much needed help in the flavor department from the bbq sauce. Â Regular sausage was okay, spicy sausage was good with a nice kick to it. Â Corn tasted like it had been sitting in butter for a long time and kind of chewy, potato salad was good but not fantastic.
The waitress essentially got me refills on my condiments and more drink. Â I suppose, had I sat directly down instead of going through the "line," I could have ordered instead, like the usual sit-down place. Â She was nice and attentive.
Like the two star rating states: Meh. I've experienced better.

My family has been coming here for our barbeque for over the past 10 years since my parents moved out to Ennis... actually I think they just might be the only bbq place in the city. Anyways, this is where my parents like to take their friends for lunch and dinner and so it's that good!
Their BBQ sauce ain't no 'weak sauce' it's some good 'strong sauce'! My brother actually was taking shots of the stuff in their little to-go cups! Their brisket is just so tender you don't even need a knife and it has a hint of the smoked mesquite. Not to overpowering, but just right. Their sausage ...well sausage i don't even wanna know what really goes into sausage, but slather some of that bbq sauce on it and it's d-lish! Their chicken is off the chain too! The skin is all seasoned and crispy like, encasing the juicy chicken meat, mmmm. Their sides I thought were a little bleh. The potato salad seemed like it should have been more mustard-y to fit in with Texas bbq. The corn  and cole slaw were fine.
It's on the North bound side of I-45 so you may have to pull a U, if you're coming from Dallas.
