Earnest B's Bbq

I know barbecue.  Period.

This is some GOOD stuff.

I had the ribs, beans, and slaw today, and I was more than impressed.
The balance between moisture, tenderness (just perfect - not too soft, not too firm), and smokiness was SPOT ON.

I have been to every BBQ place in Memphis, and Earnest's que ranks up there with the elite.

Amory:  you are very lucky to have such a gem!

Earnest:  you are a gentleman and a scholar!  You (and your father) are a true Pit Master.  I thank you, sir!

Hands down, the BEST ribs I have ever eaten.  Thank you, Ernest B!

I recently returned home for a family visit and had the good fortune to meet Ernest B during the Amory Railroad Festival.  I was chomping at the bit to get my hands on some good ole' southern BBQ since moving to NYC about a year and a half ago, and I had heard plenty of praise for Ernest and his food from my family members.  Accolades aside, nothing could have prepared me for the glorious, savory ribs I was about to consume.  

I ordered the half rack of ribs plate which comes with one side (I chose potato salad).  When I opened the box, the smoky, meaty aroma hit my nose and I momentarily became unaware of all other goings on around me.  After I took the first bite, I closed my eyes and simply enjoyed the succulent, tender meat as it fell off the bone with minimal effort.  Yes, moaning was involved.  

I generally like baby back ribs, but these were spare ribs and I may now be converted.  The delectably smoky, fatty flavor of the meat made me forget entirely that the ribs had come with a side of sauce.  Sweet and sticky, I poured a bit of the sauce over one rib and was pleased to discover that the sweetness complemented the meat and was not at all overpowering.  A little goes a long way.    

I was down to my last two ribs before I realized my mother was trying to talk to me, asking if she could have some of my potato salad.  I grunted, 'yes, take it all, can't you see I am busy over here?'  She should know better than to come between a girl and her ribs.  Like a cavewoman, I picked each rib clean in record time.    

Bottom line - if you are within a 100 mile radius of Amory, MS and have a hankering for great BBQ, Ernest B's is a MUST!
