This NC gem has everything you want out of a tex mex place after a day of hiking. My friend and I are both vegetarian and we found several appealing options without resorting to filling up on the meh rice 'n' beans side plate. Highly recommend the fajitas: oniony but delicious, and they were amenable to the substitutions we requested. Salsa is also quite good. Not the best Mexican I've ever had, but exactly what I needed tonight.

Â WIfey and I have been going to Los Arcoiris for many years...and have settled on a couple of dishes that we both enjoy.
Wifey loves the Chicken Chimichanga. Â This dish comes with the ubiquitous Mexican Rice and Refried Beans. Â The rice and beans are nothing to write about...they are filling without being great.
My dish is quite interesting...as Los Arcoiris is the only place I have found it. Â The dish is Huevos con Chorizo, basically eggs with Chorizo sausage. Â I absolutely love this particular dish. Â Is it better than other restaurants? Â I have no way of knowing, as I have never found it other places...
