Used to be the Green Cup, before the flood, and I'm very happy that it has been restored and is giving the area another dining option.
We went here on Monday, the day after Easter, and I must also point out that it was the last day they would be open for awhile, as they were taking a month long vacation.
I'm highlighting this because it might have been the reason why I was not completely satisfied.
I ordered the escarole and bean soup and it had very little flavor. My wife loved hers but having grown up in northern NJ with a plethora of Italian restaurants I have had much better. In fact my wife makes a much better escarole and bean soup and she uses alot of garlic. The next mistake I made was ordering the lamb special. My wife warned me that the reason they had it was because it was probably left over from the day before. Not that that's a bad thing but with the specials sometimes they might be experimenting. Half was cooked to perfection, medium rare. The other half was raw. The guy next to me sent his back because his was raw too. Having said that the sides were less than average. Dry unflavorful rice and veggies out of a box. Very disappointing.
On the positive side, and the reason I will go back, is because of the meatball appetizer my wife had. I tatsted it and it was fantastic. There were many other options on the regular menu like this, that I probably would have enjoyed much more.
The next time I go back I will either drop my rating to 3 stars or go with the consensus of other reviewers and up it to 5.

I ate at Peasant twice last fall and was blown away each time by the delicious food, beautiful presentation,  warm and charming decor, excellent service, and all with price points that are so reasonable given the quality of the entire experience.

I am looking forward to next summer when I get back to Vermont and will make Peasant a once a week dining experience.

    I LOVED it.  'Nuf said."

If I lived in this town I would demand my family go to Peasant at least once a week.  This past President's day weekend we were lucky enough to stumble upon it for dinner (thanks to yelp again!)  We didn't have a reservation, and it was packed, but we snagged 2 spots at the bar.  Take note of the artwork in the different rooms, it's truly beautiful.  It doesn't follow one particular theme, but looks really neat together.  I also LOVED the bathroom - fresh yellow painted walls, nice smelling candle and handcream, and porcelain blue patterned clothes to dry your hands - so green chic!

On to the food...it was all reasonably priced and so was the wine, here's what we got:
-Tuscan meatballs braised in white wine, rosemary and onion (served with delicious bread)
-Brussel sprout salad with apple, lardons and asiago
-Special: Salmon Quenelles (I had never heard of these before! awesome little salmon pastries over beans and kale!)
-Tagliatelle with mushroom gorgonzola cream sauce with Italian sausage
-Dessert: blueberry bread pudding with caramel sauce (not what we expected, more like a cake, but still delicious)

Thank god for the exercise we got on this trip because I probably consumed 5000 calories in this meal!!

In a word, Peasant is awesome! My wife and I ate there last night, and we were blown away. The waitstaff was friendly, attentive, and very knowledgeable, and the food was extraordinary. I began with the beet salad with fennel and tarragon crema, which was yummy--the crema was a perfect compliment to the beets. For entrees, we had the chicken in marsala sauce (me) and Moroccan spiced beef (Lori). After the first bite of chicken I thought I'd died and gone to heaven--it was easily the most delicious chicken dish I've ever tasted. Lori also loved the beef. For desert I had the poached prunes, mostly because they sounded so unusual. And, again, I was both pleased and surprised. Lori had the bread pudding, but I think I ate at least half of that too! We will be back!!

Just ate a Peasant tonight for the first time and it was fabulous. There were only two downsides: they don't have beer on tap (though they have many varieties bottled) and I have to drive an hour over the mountain to get to it. ;-)

To start I had one of the appetizers on special: cod and potatoes pureed and topped with asiago -- it was a dip that went well with the good crusty bread broad to the table. Overall the appetizer was tasty, but not crazy-good. Had I known that I was going to order the pasta I should have gotten one of the more vegetable-heavy appetizers to balance out the meal.

For the entree I had the tagliatelle with a mushroom gorgonzola cream sauce and sausage. This dish was out-of-this world fabulous; it was a heavy cream sauce, but the portion was very reasonable (not huge) and every bite was fabulous.

Even with tax and tip the meal came in at $40 per person, so not cheap, but very reasonable. I'm now looking for excuses to end up in Waitsfield at dinner time just to work my way through the rest of their menu.

Worth every penny, from stem to stern. No need to waste time reading words, simply go.

Peasant is the perfect example of a family-owned and operated restaurant with a quality-over-quantity menu, nice bar area, and extremely friendly and attentive staff!

After a great day of skiing at nearby Sugarbush and walking the town of Waitsfield, we recently found ourselves at Peasant in search of a quick round of pints.  Peasant has an impressive beer list, with most selections costing only $5 apiece.

This time around, I came here with a ski club on an all-inclusive trip that included meals, otherwise I would have surely picked Peasant to satisfy my appetite.  Menu options include Tagliatelle w/ Italian sausage & mushroom-gorgonzola cream sauce, Moroccan spiced beef stew w/ honey sour cream, pan-roasted salmon w/ maple balsamic reduction, and a rotating ragout w/ penne & asiago.

Although a short visit, we had a great time, enjoying our drinks and talking it up with the owners.  I'll definitely be coming back next time I'm up here skiing!

Peasant is aptly named.  This restaurant has captured perfectly the essence of simple, rustic Italian fare (with a little French mixed in as well) in a very casual setting.

For example, the white bean kale soup is wonderfully rich without being being complicated.  The broth is made without cheating, no meat stock was used.  But there is so much bean flavor and the texture is amazing.  Bread was dipped into it repeatedly.

The cassoulet was perfect, not too heavy but full of flavor.

The waiter was knowledgeable, helpful, friendly and attentive.  He was able to help us choose between two wines that appeared to be almost alike.

The decor is rustic and perfect for this little corner of Vermont.  Folks in this area tend to be very casual.  A big city type of restaurant doesn't work here, but it's so easy to do simple food in a mediocre way.  When a restaurant makes you say "this is even better than Grandma used to make", you have visit them again and again.

Having spent the past few days meandering through the MRV and eating and drinking at various low-key places, I vote this brand new restaurant on the River as my fav.  I had the cassoulet the first night then tried it for dessert and cafe tonight.  Very friendly and attentive waitstaff and a nice short menu with unique specials including desserts.  Very interesting wine list, too.
