Used to be the Green Cup, before the flood, and I'm very happy that it has been restored and is giving the area another dining option.
We went here on Monday, the day after Easter, and I must also point out that it was the last day they would be open for awhile, as they were taking a month long vacation.
I'm highlighting this because it might have been the reason why I was not completely satisfied.
I ordered the escarole and bean soup and it had very little flavor. My wife loved hers but having grown up in northern NJ with a plethora of Italian restaurants I have had much better. In fact my wife makes a much better escarole and bean soup and she uses alot of garlic. The next mistake I made was ordering the lamb special. My wife warned me that the reason they had it was because it was probably left over from the day before. Not that that's a bad thing but with the specials sometimes they might be experimenting. Half was cooked to perfection, medium rare. The other half was raw. The guy next to me sent his back because his was raw too. Having said that the sides were less than average. Dry unflavorful rice and veggies out of a box. Very disappointing.
On the positive side, and the reason I will go back, is because of the meatball appetizer my wife had. I tatsted it and it was fantastic. There were many other options on the regular menu like this, that I probably would have enjoyed much more.
The next time I go back I will either drop my rating to 3 stars or go with the consensus of other reviewers and up it to 5.

I ate at Peasant twice last fall and was blown away each time by the delicious food, beautiful presentation,  warm and charming decor, excellent service, and all with price points that are so reasonable given the quality of the entire experience.

I am looking forward to next summer when I get back to Vermont and will make Peasant a once a week dining experience.

    I LOVED it.  'Nuf said."

If I lived in this town I would demand my family go to Peasant at least once a week.  This past President's day weekend we were lucky enough to stumble upon it for dinner (thanks to yelp again!)  We didn't have a reservation, and it was packed, but we snagged 2 spots at the bar.  Take note of the artwork in the different rooms, it's truly beautiful.  It doesn't follow one particular theme, but looks really neat together.  I also LOVED the bathroom - fresh yellow painted walls, nice smelling candle and handcream, and porcelain blue patterned clothes to dry your hands - so green chic!

On to the food...it was all reasonably priced and so was the wine, here's what we got:
-Tuscan meatballs braised in white wine, rosemary and onion (served with delicious bread)
-Brussel sprout salad with apple, lardons and asiago
-Special: Salmon Quenelles (I had never heard of these before! awesome little salmon pastries over beans and kale!)
-Tagliatelle with mushroom gorgonzola cream sauce with Italian sausage
-Dessert: blueberry bread pudding with caramel sauce (not what we expected, more like a cake, but still delicious)

Thank god for the exercise we got on this trip because I probably consumed 5000 calories in this meal!!
