Its good, and enjoable. No happy about the lines or waves of people. The "world famous" or the green chile cheese burger is well worth eating. Enjoy the sides and the oddest arrangement of statues you'll ever find.

I would try a time during the week so you can truly enjoy the food....

Made the trip to hatch for 190 pounds of green chile goodness. We've always eaten at the Pepper Pot but had been told great things about Sparky's. After reading the Yelp reviews, I was sold on giving Sparky's a shot.

We arrived in town, found our chiles and got them started roasting so we could have lunch. You can't miss Sparky's...it sits on the corner of the two main intersections of town and if the line out the door doesn't give it away then the fun, antique mascots and signs will!
On to the food! You go to a counter order your food, get a number and sit on down. You can sit inside, outside or inside down the sidewalk. We opted for inside down the sidewalk since there was live music (there's live music on the reg).We sat and immediately got our shakes. I got the Sassy Strawberry full of vanilla soft serve, strawberries, guajillo chiles, whipped cream and chili powder sprinkles. M had the Chile Mango. Both were creamy and sweet with just the right amount of heat. Delicious and filling!

Then the burgers. Ohhh, the burgers. We both ordered their famous green, chile cheeseburgers. It's a bun, perfectly seasoned and grilled beef, the freshest diced green chiles and a slice of Cheddar(?) cheese. No lettuce or tomato. No mustard or mayo. Guess what? Ya don't even need it! This burger is, no lie, the BEST green chile cheeseburger I have ever had. I don't know how they do it, can't pinpoint it but it doesn't matter cuz it's delicious. Just try it and you wont be sorry. Seriously.

The burgers were accompanied by our chosen sides - pineapple coleslaw and green chile sweet corn. I'm not much of a fry person so we were happy to have alternate selections. They really helped offset the spice from the burgers.

We had a great time, music, food and drinks. Definitely my new go to spot in Hatch!

Ruined, absolutely ruined. No other green chile cheeseburger will EVER do or EVER compare to those made and served at Sparky's.

Been going to Hatch for several years and have always passed the kitschy looking Sparky's and for some unknown and stupid reason, have chosen to eat elsewhere in town. After hearing my boss rave about Sparky's on her trips through Hatch we decided to give it a try. Sparky's serves the holy grail of green chile cheeseburgers. It's a simple dish; a regular old hamburger bun, a perfectly seasoned and cooked burger topped with fresh, diced green chile and finished off with a slice of cheese. That's it. Sparky's has cleverly disguised nirvana in the most basic burger. No need for condiments, lettuce, tomato, whatever. In fact, I think adding those things would ruin this burger. It's really hard to describe it, you just need to try it.

A and I each ordered the burgers; hers with a side of sweet corn with green chile & onion and a Sassy Strawberry shake and mine with a side of pineapple coleslaw and a Chile Mango shake. The corn was really good with a wonderful sweet flavor however I would have liked more green chile flavor in it. The pineapple slaw is a nice creamy slaw with diced pineapple in it ~ a great touch. The shakes are out of this world. Creamy soft serve ice cream mixed with guajillo chiles and mango syrup, topped with fresh whipped cream and red chile powder sprinkling was my favorite. A loved the Sassy - same ice cream and chiles mixed with frozen strawberries and topped the same way. They're not "hot", just nicely flavored with the chiles....just a nice bit of heat.

We ate in the large dining room down the sidewalk, a large room with tables, booths and plenty of fun antiques on the walls. There is frequently live music being performed and we enjoyed listening to a performer while we ate lunch.

Do not, I repeat do not, pass Sparky's like I've done for years. Park your car, jump in line and get ready for burger nirvana. Damn it....now I have to tell my boss that she was right.

We went to this Hatch Chile Festival and judging by the line out to the street, we had to try it. It was well worth the wait. The shakes were perfect, the hamburgers were hand made not frozen, and the band was great.

One thing I was disappointed about, the green chile on the burgers was pretty mild, almost non-existent. I hoped for something a little more mouth burning. I didn't even see an option where you could choose hot or mild.

However, I'd go back in a minute. Only other thing missing was a cold beer!

Thanks for the great experience Sparky's!

If I could give them a 10 for their green chile cheeseburger then I would. It was so fantastic. I drooled all way home wanting another one.  My only complaint here is that I dont live closer so I can buy one every day!!!  Funky fun decor in the place and outside. We also tried the hot dog and that was great as well as the sausage bites that they entice you with at the front counter.  I had to be pulled out of there or I would have eaten myself into a food coma.  And the corn chile onion side dish is also great which I am trying to replicate now but cant.  Oh my I cant stop dreaming about the food there.

We traveled from Tucson to the Hatch Chilie Festival and stopped at Sparkys the night before things ramped up. Our timing was perfect...made the front door of this eclectic little restaurant before the rush came behind us (out the door). Interior is cool, funky, and it looked like someone raided all the local swap shops for the wildest items you could find. My wife had the ribeye and she loved it and I ordered the Green Chilie Cheeseburger and it was as good as expected. Chilies were diced and thrown under the cheese to keep them in place of the 1/4 lb burger cooked to your liking. Went with Medium and it was slightly pink which I love. They had great sides with the meals...my fave was the corn with chilies diced into the soup along with onions. Very tasty and something I will take home as a recipe. The only drawback (no fault of theirs) was the little flies that seemed to go everywhere...best to eat inside but they still followed you. That time of the season, I guess.
All in all, a fun and funky restaurant with a great cheeseburger and ribeye fare.Last warning...parking is across the street...the street that feeds travelers heading to the interstate. Be real careful of crossing four lanes of traffic.

Based on my neighbor's recommendation, a group of us made the trip to Hatch from El Paso just to try their famous green chile cheeseburger. We were not disappointed. I think it's fair to say that Sparkys serves the best cheeseburger I've ever tasted. The place itself is also something to see with its collection of oddball statues and antiques. I look forward to making a return trip.

There aren't many dining options in Hatch, NM, but the ones they have are great.

Sparky's is not only a great place to eat, but a funky and fun destination.   I highly recommend the green chili cheeseburger.   Yes, the other things on the menu are great, but the green chili cheeseburger is phenomenal!

They have some bizarre stuff on the menu that I haven't had the pleasure to try, maybe I will have the guts in the future.  Everything is pretty flavorful here.  Yummy green chili cheese burgers and hot dogs.  Always a stop here headed to Albuq.

Discovered this place by accident on my travels.

Tried the world famous Green Chili Cheeseburger and it was nothing but amazing! Perfectly grilled and not greasy at all. Didn't apply any additional condiments and flavoring was more than satisfying!

Not being a big fan of coleslaw, but saw that they had a pineapple coleslaw; I gave it a try and surprisingly the flavors blended well!

My date had the BBQ pulled pork and side of beans, which he was well pleased.

Pricing was more than fair and if I were in the area again, this place is a MUST!

    Highly recommended!

We were stopping in Las Cruces before heading west, but drove past it to eat an early dinner at Sparky's.  It is well worth a long drive for this food.  The green chile cheese burgers are unbelievably good.  Do not miss them.

Worth the drive from Las Cruces, NM.  I came to Sparky's for one thing only and that was to try the Green Chile Cheeseburger and it was amazing.  Not to big & not to small just perfect. After I ate it I didn't even pay attention that there was no lettuce or tomato in it.  My hubby got the 3/4 lb plate which had; pork rib, lean brisquet, sausage, and shredded pork w/ a side of green chile cream corn.  My plate was $5.99 & my hubbys $9.99.  Well worth the price.

Absolutely the best Green Chili Cheeseburger on the planet.  You line up, order, get a number, fill your drink and then head next door.  We were there on a Saturday at noon.  We waited for them to bring our and listed to a great five member retro band playing "Route 66". Crazy decorations inside and out, crazy good food, you'd be crazy not to give it a try!

Oh my God! I finally understand why people move to Hatch and never leave. That is the best chile burger I've ever had.  From now on I do not drive from Albuquerque to Las Cruces, El Paso or Tucson without going here. Now if you'll excuse me, I need to cope with regretting so many drives past Hatch when i didn't know this place existed.  That's like 1000+ chile burgers that should have been in my belly!

Wow! That's how I'd describe their Green Chile Cheese Burger. Perfectly cooked, perfectly seasoned, and perfectly juicy. And beautiful to look at too. It was sublime. The fries were a bit too salty for my taste, buy they were perfectly  cooked to a golden brown with just the right texture and crunchiness. The service was fast and the staff were terrific  It was well  worth the trip from Las Cruces. I would go there again and again and again.

Cool kitschy decor. Live music was playing next door (additional seating for them). Burger melted in your mouth. Buns were pre-packaged (only downside) but heated and toasted. Green chile sweet corn was really good... I'd recommend this as you can get fries anywhere. Root beer float was delicious... Had nice creamy vanilla taste.

This place is truly a hidden diamond in the small city of Hatch. I would nevrr go to Hatch without going to Sparkys; its the best part! Their frys are crispy and seasoned well, and their sandwitches are full of tender, flavorful meats. The decarations outside are a nice touch. They help create a fun, colorful, and slightly vintage atmoshpere. The only reason this isn't 5 stars is because of tgeir shakes. I ordered a heath bar shake and it was very thick, and it seemed like they put soft serve in a cup with a straw and called it a shake. Don't get me wrong, i love thick shakes, but this just didn't seem like a real shake to me.Overall Sparkys is a fantastic place with a fun atmoshpere, just don't get the shakes! :)

Today was our second visit to Sparky's, and the first visit since we moved to Las Cruces.  Their world famous Green Chile Burger is exactly as advertised - Excellent.  The green chile corn and green chile cheese fries are also very good.  The outside decor of famous fast food characters is very entertaining.

If you are driving to the El Paso/Las Cruces area from Albuquerque (or vice versa,)
make plans to stop here for lunch!!!

Mmm, Mmm, Mmm!!!  First off, the outside of this place is FUN!  The owner has managed to get the cast offs from some very famous restaurants.  You can take a picture alongside Ronald McDonald, or sit next to Col. Sanders.  We looked too late, but I think I saw a Bob's Big Boy on the roof.  I'll have to check next time I go.  They have a seating area next door, and we were lucky enough to get there in time to hear the blues musician playing at lunchtime!  What a blast!!!

Now for the food.  I have to admit, I've never ordered the green chile cheeseburger. (GASP!)  My husand has, and he fell in love with it.  I keep ordering the same thing, which are the Teako's Tacos.  I am in love with these tacos!  Pulled pork, smoked to perfection, with green chile and a crispy taco shell.

Sparky's also makes a homemade bbq sauce that you can put on top.  The first taste of the sauce is misleading, because it's very sweet, which I'm not too fond of.  But, after a few seconds, the smallest hint of heat arrives.  After a few more bites, the heat kicks in and the sweetness of the bbq sauce makes a perfect blend.

This little side trip is definately worth the extra hour you need to add to your trip.

My wife led me to Sparky's and I thank her for doing so every day. The World Famous Green Chile Cheeseburger rates as the best burger I've ever had. And by a longshot!

The meat is seasoned deliciously and then grilled over mesquite or hickory to a delightfully seared medium-well. The burger stays piping hot and is supremely flavorful to the last bite. Ordinarily I like mine with lettuce, tomato, green chile and mustard. Sparky's, however, states that they're so proud of their burgers that they serve them dry and sans condiments and toppings.

At first I thought this was just marketing drivel, but upon taking the first bite I became a true believer. My wife and I order the burger with a side of beans in which we occasionally dunk the burger for a little extra flavor.

The coffee drinks and unique shakes are really good, too.

I'm not especially fond of the bbq, but then I have ordered bbq only once because the burger is SO good.

Only complaint is that the restaurant closes at 7 or 730 and is sometimes closed when we make it into Hatch from Albuquerque en route to Las Cruces. But come hell or high water we make it there every trip for a splendid burger.

This was my first time trying a green chili burger.  OMG.... It had been a while since I have had a tasty burger, so I decided to give it a shot today; so glad I did.   I ordered my burger medium pink, "Sparky's style".  It was perfectly cooked, juicy, meat was very flavorful, bread tasted fresh, and the chili pleasurably spicy for my taste. So good in fact, that once I took that first bite, I couldn't put the burger down to start on the fries.  One of the best burgers I have ever had, no doubt about that.

The staff was very friendly and the vibe there very relaxed.  Wish we would have heard the live music, we might have gotten there too late? Too early? Not sure.  We will defefinitely be going back to Sparky's very soon.

First of all, I have to remark about people calling this a "joint". Who says that? Makes it sound like a dive. I know the term, but I've never known anyone who used it that wasn't from Chicago or Boston and or talking about a divey place. Just very strange. This isn't a Burger "Joint", it is a restaurant.  The main food here is Bar-B-Que and Burgers as well as Espresso and various fountain-type combinations. We tried the Green Chile Cheese Burger which was very good. The hamburger itself had a nice smokey grilled flavor. Then it was covered in chopped green chile and dripping melting cheese. The spicey pinto beans were good as well. The french fries are seasoned wedge fries and come from a frozen package, however. We had a mixed Italian Soda drink which was very good. Very nice retro/pop decor - inside and out (you can't miss it with all the giant props from the old days... the A&W family on the roof, Colonel Sanders and Ronald McDonald in the front, a giant Uncle Sam... as well as various other props along the roadway to lead you to Sparky's). Comfortable seating and friendly service. Overall good burger,  beans, good drinks, comfortable experience, disappointing fries.

We had a bad experiences on our second visit which included the wrong drink combo, lots of fat on our brisket, and less brisket than we paid for. Since then, however, we decided that we were gonna drive out of our way, and try again, because their brisket was pretty good otherwise, and the BBQ sauce was really really good. On our third visit, we almost didn't get any brisket (after driving over an hour round trip), because someone had come in before us with a huge order, but we did get the brisket and lots of it! No fat this time... and they got the drink right this time. We'll be back...and we WILL drive out of our way..but next time we'll order ahead ;)

Best things: green chile cheeseburgers and brisket w BBQ sauce
Worst things: Frozen seasoned wedge fries :q.

It's in the middle of nowhere in a small interesting town with chile peppers dangling from every store. I had the world famous green chile cheeseburger and green chile sweet corn. That and a coke for just $8.48 was totally worth it. It is an awesome burger. If you find your self near Hatch, New Mexico.......although I don't have the slightest clue why you would....but def. stop in Sparkys

I have had a ridiculously large portion of this menu, but my boyfriend and I are fatties. The burger was incredible! The tacos were bomb you can TASTE the smoke in the taco meat, amazing BBQ and we lose our minds about the corn and coleslaw. All in all i honestly travel from El Paso once a month JUST to eat here.

ALso the staff is so sweet and its pet friendly! We eat outside and his wife has a bowl out for water and they gave our pups a scoop of soft serve for free since it was so darn hot!

    SPARKYS I LOVE YOU!

    3 words....GREEN CHILE BURGER .... TRY IT!

My husband and I stumbled upon this place on our way to, of all places, Truth or Consequences.  We made a special trip back out to Hatch just to check out this bizarre burger joint we passed along the way.

It's the most amazing place in the middle of nowhere!  They even have a Colonel outside to greet you before you make your way in for some seriously good eats!  The coffee is pretty darn good too!

It's the best Burger joint/coffee joint for miles and I'll say it again... GREEN CHILE BURGER.  It's a must have since Hatch is the Chile Capital of US!

Every time my husband and I are in New Mexico, we make it a point to stop in at least twice!  Gotta check it out my friends.

So the fam and I took the drive to Sparky's as there seems to be a lot of buzz lately in Las Cruces about this burger joint. I'd say it was worth the drive and the effort, but only just.

Now I'm a positive person don't diss (are the kids still saying that?) and I'd say this place is a bit better than average.

We had some chocolate shakes, chili cheeseburgers and fries, overall a ton of chow for $35.  The wife went rogue and had the pineapple slaw and a chili lemonade (el rojo).  Her choices were spot-on.

The service was amazing and all the staff was super friendly. They laughed and joked with us and made us feel good that we were there. The chairs were super cozy (weird that I noticed) but the flies and the full neon fly paper trap were kinda gross. I live just 30 minutes down the road and we don't seem to have this same bug issue.

Anyway, the food was good and we all ate to excess, prompting a long nap once arriving home. It's a good burger and fries. Next time I'll opt for the kids sizes or the BBQ.  If I was driving by Hatch, I'd stop and eat.  I wouldn't make a detour well out of my way, though.

I just tried Sparky's in Hatch for the first time, with my good friend Melissa C. She'd told me about this place, and I remember seeing it when I last visited Hatch for the Hatch Chili Festival this past Labor Day Weekend. The place is hard to miss; Hatch having a rather small downtown and Sparky's itself being festooned with all sorts of old signage and kitsch. I was greeted with both a high-fiving Ronald McDonald and a seated, gentile Colonel Sanders.
Sparky's is known for its green chili burger.  In fact, so much so, that when the nearby border patrol checkpoint asked us our destination and intended activities, and we replied "Getting cheeseburgers", the border patrol officer countered with, "Sparky"s?"
We ordered two green chili burgers, with sides of pineapple cole slaw, green chili corn, and fries. The fries were fantastic--battered seasoned potato wedges in a generous portion. The green chili corn was very nice as well, corn and tasty green chilis in a light creamy broth. the best side by far was the pineapple cole slaw. I love cole slaw so much, that I now fancy myself a connoisseur of the creamy cabbage delight. Sparky's had the right sweetness and tangyness of almost a Waldorf salad. It was absolutely delightful, and I would score it 5 cabbages, if I had such a scale. Melissa and I were very happy with our lunch, and felt it was worth the 30 mile drive from Las Cruces. The town of Hatch itself is so quaint and charming, I can't wait for my next trip to both Hatch, and Sparky's.

My friend Karl and I went on a road trip 13,000 miles across the US, and we ate burgers everywhere. The Green Chile Cheese Burger at Sparky's was the best I have ever eaten. The burger was so good that I bought an extra to take with me to give to my Mom who was staying in Tucson, AZ. While there, we were approached by the owner, and he talked with us and gave us a free sundae. The place was so comfortable, and I will return again. We also bought a big bag of hatch peppers from Sparky's to take with us. They even give you a cooler to take them in so they will stay fresh. Sparky's is a must for lovers of burgers and Hatch chiles. It makes me excited for a reason to return to New Mexico.

This ranks as a 5 Star as it follows my montra of "Eat where the locals eat.". In Hatch there is none better. From the World Famous to the BBQ, this place is a locals secret that is being slowly discovered. Now a word of caution: This place is small so don't get mad when it's standing room only. Take your time, enjoy the food and relax. Besides, if you find yourself in Hatch, your not in a hurry to begin with.

Driving through NM on the way up to Colorado, we made a deliberate stop in Hatch.  I wanted to see if these chiles were worth their reputation.  The answer, most certainly, and doubly so if piled atop a fresh grilled burger!  We came with our dog who was pretty riled up after about 4 hours in the car.  We were able to sit outside at the picnic tables, and some of the staff came out to greet the dog.  The burger was awesome, the chiles had a definite kick, so if you totally askew spicy then this is not the burger for you.  My husband had some green chile cheese fries which he liked, but I enjoyed the fries even more plain.  If you are driving I-25 and need to stop for a bite, this is a delicious and memorable place.

This place is a MUST if you find yourself near Hatch. The food is great (the world-famous green chile cheeseburger is delish, as are the milkshakes which incidentally are topped with cute and fun sprinkles!!), the decor is fun and kitschy (an understatement... you just have to go there), and it's an all-around good time. The one and only downside I experienced was an Amityville Horror-like multitude of gross flies (they're actually everywhere in Hatch as far as I can tell, not just Sparky's, but they are up in your shit while you are trying to eat).

    Just go!!
