Had lunch from their truck at the Denver Federal Center's Thursday Farmer's Market. The owner was very friendly and gave us a generous sample of the brisket. I kept hearing how good the Pork sandwich was so I went for that and did not regret it! The meat was so so soft yet retained great pork flavor (he told us his secret was patience, hey, the guy's got a point! I know in a lot of Chinese stir fries, in order to make meat tender quickly, baking soda is added which takes a lot of the meat flavor away. Definitely not the case here!) The best part is that it's got chucks of fat that resembles skin, connected to the meat, yes it melts in your mouth but it ain't flat either, it leaves that curdly sensation on the tongue which I call perfection! I only wish the meat was smothered in BBQ sauce, as I found it a little inconvenient to keep going back for the bottle! lol~

I had the pork sandwich - the meat was moist and flavored just right. The BBQ sauce was sweet and separate so you could add as much or as little as you wanted. The server was so nice and made me feel like family in just those 5 minutes I was getting my food.
I live in Highlands Ranch, but will definitely be making a trip to Aurora soon to get a bucket to bring home!
One warning though, Bubby's is from Texas where they normally put coleslaw on the meat (I don't like that and they didn't have coleslaw this time) so you might ask if you don't like that style.
UPDATE: I actually called him after that when I wanted to get bbq while I was in Aurora. He said they don't have an actual restaurant, but do catering and deliveries. He offered to deliver it to me, but I met him at the DFC next time he was there and brought a few buckets home.
