I drive to Everson every few weeks from Seattle to take mom to her doctor there. Â We found out from my sis last summer that there was a new Mexican restaurant nearby. Â So we tried it. Â Now, anytime I can find an excuse to get to Everson, I make the trip and go to Mexico Tipico. Â The enchilada sauce is divine! Â The portions are just right and the meals are not laden with heavy cheeses and sauces to make you feel like you'll never eat again. Â The margaritas are delicious, and save a little room for dessert if you can. Â Reasonably priced and the staff is very friendly. Â Everything I want in a dining experience!
Review Source:Mexico Tipico was a pleasant surprise. Â Hubby and I were driving through the small farm towns of Everson and Nooksack on our way to the equally small town of Sumas. Â
We were getting hungry and were not sure if our destination involved dinner so we stopped at Mexico Tipico because it was the only restaurant we had seen in ten miles.
Mexico Tipico is a good sized restaurant and seemed to be the hot spot to go in town, as it was pretty full. Â As I said this area is farm country, so the air smelled like cow dung and there was a large rooster statue in front of the restaurant. Â
Hubby and I shared a plate of cheese enchiladas and a beer. Â Like most Mexican restaurants, they start you off with chips and salsa and keep bringing them until you get the bill. Â The chips were hot, thin and crispy... very yummy! Â The salsa was chunky and spicy enough (although I do prefer more spicy). Â Our enchiladas were a generous portion and very tasty. Â
Our meal ended with a complimentary dessert. Â Vanilla ice cream topped with freshly made cinnamon tortilla crisps. Â
Hubby and I were so pleased with our experience here, we wish there were one closer to Edmonds! Â
If you are ever driving to Sumas, or through Everson, you must stop and eat at Mexico Tipico. Â You will not be disappointed! Â
