    Despite the hit-or-miss service, I really enjoy this place. The beers are great (which is ultimately all that really matters at a brewery anyways) but the food is pretty good too.

    They have the tiniest kitchen I have ever seen (think small apartment kitchen) so it is no wonder they can be easily backed up in there. I had the Mac & Cheese the first time I was in and absolutely LOVED it, so I was bummed when I went in again and it was off the menu. Also off the menu are the sliders, which my husband really enjoyed. They now offer a more extensive list of burgers and some other more restaurant-style entrees other than the bar/grill type food I love.

    I mentioned the if-y service earlier and the more busy the restaurant, the crappier it gets. It seems that they are always understaffed so prepare to wait a long time to order, pay and get refills. BUT, I don't think that the service should stop you from coming here. At all. If you skipped out because of that, you'd be making a mistake. The beers really are awesome, and even if you don't care for the ones they brew, they have tons of other locally brewed beers on tap.

    If you are in the Springs area, this is a must try.

    The beer selection is very nice. I liked how they have many taps from out of state. The music they played was my kinda style, roots reggae.

    The Slap yer Mama IIPA was very balanced considering the IBUs and strength. Being from San Diego and a big drinker of West Coast style IPAs, I could be teleported to Trinity and drink the whole keg of their Flo. I also liked the Elektrik Cukumbahh, unsuspectingly on the strong side for such refreshing taste!

    The food was delicious and stood out. Their menu was simple to order and the plates came out fast for us. The bartender, servers were very friendly and accommodating. Rikelle deserves an A+ for her sharp service, and she knows beer. Hope to see you again!

    solid beer usually, they specialize in saison/belgian style ales, but they have a wide enough brews to satisfy your friends who like mass produced ales/lagers.

    Restaurant is very nice environment, combines a Colorado feel with perhaps the Hippy crowd, cool bar top made from recycled glass and lit from below.

    Food leands towards vegetarian and 'slow' food (local produce), perhaps not 100% vegan, but I really enjoy the food.

    plan on $20 to cover an entree/beer/tip - fairly pricey,

    However, go during happy hour, and you can typically get a house beer for $3!  I also recomend the Belgian or sweet potato fries with a variety of kick-ass sauces.

    The growlers are a great deal also, but the champagne bottle beer are champagne prices since they've won several Great American Beer Festval awards, those are the priciest beers, of course!

    Staff has always been friendly and fun to chat with.

    They have a nice out-door seating area with a nice view of Pikes Peak.  Really makes for a great afternoon with a few friends.

    Overall - great environment by yourself or with a group from work, great beer, great food, but a little pricey.

    Oh, and they have free wi-fi...

    This place is awesome. From the minute I walked up, I was a fan. Can you say character? This place is loaded with it. From the "wooden barrel" tables outside to the "bookshelf" doorway just inside, and it only got better. There is a very laid back feeling here almost "Hippie like" in a really good way. All this already, and I haven't even been seated yet.

     The staff was cheerful and attentive. The waitress took her time to explain the menu and all the home brews. Not able to decide which individual beer to try, we settled on a flight of beers: all eight of their house brews.  We indulged in two of their unique appetizers: the Shishito peppers and Beatnik platter (hummus & veggies), both of which exceeded my expectations abundantly.

      As for their beers, they varied from light to dark, and all had their own distinctively pleasant attributes.  The IPA and the Cucumber Saison left a memorable impression, as did the presentation of the flight.  Just like the rest of the brewery, "full of character."

      I truly enjoyed Trinity, and can't wait to visit on my next trip to Colorado.  Until then, Cheers!

    At the time of posting, this place carries the award for the absolute worst service I have ever had.

    I was taken here by a friend when I came out to visit him in Colorado Springs. He knows that I'm a huge fan of craft beer (who isn't nowadays?). Anyways, he was telling me about this place for days beforehand, so I was pretty excited.

    We were seated all the way in back, which was fine, because we had a party of 8 or so, and that was the only reasonable table for a party that size. We ordered Belgian fries as an appetizer. These did not come until after the meal, and really weren't anything to talk about. For beer I ordered the Flo IPA, cask drawn. It was a very solid IPA, though it doesn't rank in my favorites. For food I ordered the Buffalo chicken mac and cheese. It was tasty, but really not much better than anything I could have made at home.

    WARNING - This next section is going to sound snarky, but I have to vent. The service was 100% awful. I will never, ever go back because of the service. The place was almost empty, and yet our waitress was absent minded, paid no attention to detail, and dismissive. As I noted above, she completely forgot the appetizers. Maybe this could have been rectified earlier if she had come to check on us before she brought us our food? And, after the food was brought to our table, we didn't see her for an hour or so, which was a shame because some of the dishes weren't correct (sauce left off the plate, etc). So some members of our party had to eat incomplete entrees. The water is in a cooler in the back of the restaurant with plastic cups. I thought this was strange at first, now I realize it's because the waitstaff can't be bothered to remember to bring water to the tables. What really irked me was being charged for gratuity, when the service was so awful. This was the only time I have been tempted to ask to speak to the manager based on failure of service alone, but we were on a schedule and I didn't have time at the end of the meal. So, in lieu of that, I vented here.

    VEGAN REVIEW

    Staff was maybe not super-knowledgeable about veg*n eatin' but VERY VERY VERY accommodating.  Found us vegan ranch after accidentally serving us yogurt-based sauce for a burger.  So, very nice.  Not enough to push to four vegan stars, mind you, but very, very nice!

    __ What you want to eat here, my little compassion-heads:

    1) The seitan wings with (on our day) _vegan_ ranch that isn't on the menu!  These were quite delicious, interestingly served, heavily sauced, and a really good quantity of food for the money.

    2) The Six Foot 4 burger.  This was delicious.  Really, really delicious.  Every part of this was really, really good.  The sauce was good.  The avocado was good.  The bun was good.  The burger was really good.  Yeah, very nice.

    ... but that's it.  I saw the potato fries and they looked okay, maybe.

    __ Stuff that had problems:

    - Shisito peppers: no hot ones (yay?  boo?) but like eating a fried salt lick.  Twenty times.  Very pretty though!

    - Falafel burger: this is a five-dollar burger.  You could make a more satisfying falafel using a mix at your house, assuming you deep fry it, and then you could eat two sandwiches!

    - Sweet potato fries.  Greasy and not at all delicious.  Plus all the you-wanna-buy-more-beer salt again.  Eating them was a chore.  Even with a beer.

    VEGAN SIDE NOTE to TRiNiTY: Man, what happened to the chick peas?  Little fried balls of goodness, they were, and sadly missed.

    New to the area & was looking for OK food and good beer.  Main complaints on Yelp seemed to be poor customer service.  Since we were leaving our 6 kids home w/ a sitter, we figured the longer the meal took, the better and decided to give it a try.

    The service actually ended up being quite speedy.  The place was packed, so we sat at the bar.  We both tried a variety of little samples before settling on on a Saison and... (I can't remember what my husband ordered, but he was happy with it).  The Belgian Wit was also very good, and we were both fans of the chicory porter.  Later we noticed the had a whole wall of "guest" beers, but we had been very satisfied with the beers brewed in-house.  

    Food better than OK.  I ordered some fries and chips.  My point of reference for fries/frittes is Granville Moore's in DC... had it not been for GM's, they would have been towards the top of my frittes list.  Got the curry ketchup and mustard as dipping sauces.  Would've preferred a larger selection of mayo-based sauces (horseradish, truffle, etc).  Enjoyed the chips and salsa, and after living in Alabama for a year, I appreciated the salsa had some kick to it and wasn't just a bowl of insipid tomatoes.

    Husband's cheeseburger was great.  I was jealous.  

    In sum, great assortment of beers... great service (though slow service can also be a plus for us), and good food.  Once we find a place we like, we tend to hone in and don't branch out very much, so this might end up being my last Yelp review for a Colorado establishment while we are here.

    This is a very solid brewery. It has eight "home brews" on draft and they offer a sampler of them all. I believe they are 6 ounce tastes and it costs $12. I went during lunch and didn't want to get hammered so I simply ordered a pint.
    I got the Belgian Wit beer they had on draft and it was good. Nothing too different than what I have tried before!

    I got the hummus and veggie plate to eat and it was very good. The hummus is home made and the veggies/pita chips were very fresh (in fact, the pita chips were still warm).

    I sat at the bar and it wasn't busy so I had great service...constant water refills, ect. I would recommend this place to friends, just warn them that it is slightly pricier than many breweries of it's kind. I got a beer and the appetizer hummus plate and it ran me $18 with tip....not necessarily what I expect to pay in the middle of the week at a local brewery. They do play the "organic" card pretty hard so I believe that's why they're trying to justify the prices. More power to the

    Overall, I had great service, experienced a good atmosphere and enjoyed a decent lunch plate and beer. I am planning on going back when I have my drinking pants on and trying out the sampler so I can experience more of their beers!

    A little too hipster maybe.... I appeciate organic menus and trying new and different things but some ppl do not. My lunch was delicious but this may not be a place to take fussy eaters....at all. They dont serve Diet Coke or anything that contains aspartame...FYI. My friend almost had a meltdown, but ordered iced tea instead but it was different / very sour & unsweetened (they never brought the raw sugar we asked for....twice).
    They goofed an order of pasta and didnt 86 mushrooms on a sandwich & didnt come by often to refill drinks. The food was good (sweet potato fries with wasabi dipping sauce.....YUM! Who knew?) the seating outside is squirrely and cramped and the service was sketch that day, friendly, just not attentive to details & the devil... is well, you know

    Good but pricey food. Last time I had the Kobe beef burger. It was a 1/4 lb but seemed lacking after they burned it to a crisp.  Great french fries.  My wife had an outstanding burrito.  
    On our second visit we expected some good things and decided to bring our family.  We noticed they cut half the menu but left their pricey and meatless burgers.  Then the female bartender/waitress had a really rude attitude as if we were an inconvenience.   She brought us water and then said "oh by the way the water refills are in the back."  WTF?! Furthermore, she asked my wife what to drink but didn't even acknowledge my mother in law and walked away before asking for her order. I could go on with her snottiness but bottom line is we ended up just walking out.  Not worth our money... Seriously, this place could be good but the service is awful.  I don't think I am the first person to comment on this waitress.  We won't be back nor will we recommend to our friends.

    Never again!
    I took some friends from out of town here, one of whom is a beer-lover and the other who can't eat gluten.
    We arrived at about 8:02 and they close at 9 p.m., so enough time to have a beer and order food.  Our server took our drink orders and then when she brought them back at 8:15, she told us it was last call.  Last call 45 minutes before closing?  That's ridiculous.  Strike One.

    The entire time it seemed like we were a huge inconvenience to our server.  I ordered the falafel, one friend ordered the burger with pancetta (Horrible choice for a hamburger by the way.  It was cut too thick and it's too fatty so you can't actually get a good bite without pulling the entire slice off of the burger.  Prosciutto would have been a better choice, but what do I know?), the other friend ordered a cheeseburger without the bun because she can't eat gluten.  I was not entirely impressed with their menu and my meal was just OK.  I think $12 for just a falafel sandwich and no side is a bit steep.  Not to mention that the friend who ordered just a cheeseburger was charged one of the full menu item prices; $14 for a cheeseburger.  Whatever.  I was not impressed with the beer.  If I had had a chance to order another one I might have, but they went ahead and made that decision for me, thank you very little.

    The real kicker is that on the sign on their front door it says that they open at 12:00 a.m.  Well, that's midnight the last time I checked so I jokingly asked the server if they opened at midnight.  She snottily says, "No, noon."  To which I responded that their sign said 12:00 a.m. and that would be midnight.  She then snapped, "I know that.  I have two degrees and I didn't write the sign."  Whoa.  No reason for the attitude, honey.  Not to mention that they were closing up shop faster than ever, putting chairs away and generally sending the vibe that you better hurry up and finish.  
    Then the server brings the check, doesn't ask if we need anything else, doesn't say take your time (since I guess it was obvious that she wanted us to leave ASAP).  Oh, and all of that for $71.  
    I'm huge on supporting local businesses, but next time I am going to spend my hard-earned money elsewhere at an establishment that actually appreciates it.  And I'll be telling everyone I know about the terrible customer service and sub-par beer and food.  
    Since I have THREE degrees and have eaten great food all over the world, I'd like to make a couple of suggestions to Trinity: Work on your customer service and your menu.  Both are severely lacking in quality.  You might win some, but you just lost one.

    Good beer, good food, but poor service on several occasions knocks this place down a couple stars. Early on, service at the bar was usually top notch... except when we had the younger female bartender helping us. I think she spent more time texting on her phone than helping those at the bar.

    Every time we sat at a table, the service was even worse -- all three times with the same, older female server. When she did come around, she always acted as if we were a major inconvenience.

    Sorry to call out the two servers, but the poor service ruined the experience. I can see one or two times, but four times in a row? Might be a while before we decide to give it another go.

    Slap your Mammy, TPS Report and Red Swingline are a few on the names that you'll see on the beer menu when you go into Trinity.  Not only do they have unique beer names, the beer are pretty damn tasty.  If you like IPAs the Slap your Mammy is the beer for you, not only do they have it on draft ... they also serve is on cast for a slightly different experience.  Serving the same beers through different ways seems to be the norm around there.  They serve a lot of their beers on casts, nitro and c02 ... kind of a different experience with each pour.  Along with a dozen of their own beers, they have a dozen guest taps as well ... so you're likely to find something you don't hate.

    Like others have mentioned in their reviews, the service is not 5 star.  It's more in the 2 star area.  That being said, act accordingly.  When you have the server there order beers/food and take care of business because they don't come around as often as you'd like.

    I'm not sure if I was just extremely hungry or the food was that food, regardless I enjoyed the food.  The serving sizes are pretty standard so don't get a case of hungry eyes.

    Overall I'm a fan of Trinity ... in fact when I'm down in CO Springs I'll make a point to stop in.  The beer is solid and they sell most of their stuff in either growlers or bombers ... so you can take it to go.

    Despite the negative reviews on this site, we tried Trinity as it was the closest brewpub to our hotel in CS.  We found it to be delightful. Service was quick and attentive. Beers were very good.  Prices were what we would expect in a brewpub. The menu was more imaginative than most and had a good range of vegan and vegetarian choices. Plus, the atmosphere was hoppin' on a Friday night without being overwhelming.  Try it!

    Cool place, I had a burger made from lamb.  It was cooked perfectly, and the bun was pretty great too.  They did not have regular tea, but only hibiscus tea.  So if you order tea keep that in mind, because it's bitter.

    Found this place in VegNews and decided to try it while visiting my boyfriends brother at college. The atmosphere is great and I really liked the book doorway as you enter. It was Saturday lunch time and pretty crowded but that didn't have an affect on the service. Our waitress was super friendly and very helpful making veg choices. My bf had the sweet potato and chorizo burrito (not veg) and his brother and I split the mushroom sliders and seitan wings. OMG the wings were amazingly yummy. They weren't really wings however. We got them sweet and spicy with peanut sauce and they were very similar to thai satay. So good.  The sliders were very good as well. They make a spicy beer mustard which was awesome.  We all also split a veg green chili fry which was delicious. I am usually not a fan of veg green chili but this one had a mild flavor which I personally liked a lot. I am not much of a drinker so I can't speak for the beer but my bf had a FLO ipa I think and he said it was very good. He also bought a pumpkin ale ( which was delicious ) and a Slap ya mammy (I think) which he is in love with. It is super bitter which he likes. So I do think it is a great place if you are looking for good beer and unique and delicious pub foods.

    Trinity is incredible.  The beer is great - the food is amazing, though a tad eclectic.  I've had dozens of their beers and as beer goes - some have been good - some have been great.  It's always been an experience being here.  You definitely get the feeling that they love their beer.  They're always more than happy to tell you about stuff, let you try stuff, etc.

    The food is definitely not your usual bar food - it's better.  I had a bacon appetizer the other other day that increased both my happiness and my cholesterol by at least 100 points.  They have some other stuff that's good too - sweet potato fries, wings, etc.  Good stuff.  

    The only downside is the service - these guys are trying - but I've been there on two occasions where I've waited so long to catch someone's attention to order a beer (while sitting at the bar), that I've given up and left to a diff place nearby.  They just simply aren't keeping up.  Your glass can sit empty for 10-15 minutes sometimes.  You also get the vibe that they're friends with a lot of people that come in - and if you're not part of that crew, then you're kind of an outsider.  

    But overall - fun place, good beer, good food, I'll be back....when I have time on my hands.

    I like the atmosphere of this place.  I do wish that they had some chairs with backs (it's all stools) but otherwise it's friendly and what you would expect for a little bar like Trinity.

    Personally, I am a huge fan of the fact that you can get lamb sliders, and the fries were pretty good too - served in a huge cone.

    We never had a bad experience with service, although sitting at the bar was probably one of our favorite experiences there, and we had good conversations with the couple sitting next to us.

    The beers were just OK, according to my husband, which is why I'm leaving this at 3 stars - we will most likely be back, but even though we live very close we don't frequent it on a regular basis.

    Like other reviewers I found this place to have great food and awesome brews. The one and frankly annoying issue with this place is the utter lack of space, seating, and service you will find there. I have been to this brew house a few times and if I happen to get a seat at the bar I find the service to be spot on, but if you want to sit at a table the service is almost non existent. I recommend that the owners think about at least one server be dedicated to the floor, they will certainly improve the service at the tables.

    A few of us stopped here on St. Patrick's Day while in town during a convention. We were looking for some good brews and food.

    We had three different brews, and the stout was our favorite, but all were really good.

    For such a small place, you wouldn't expect the unique food choices. We tried the pheasant brats (yes, pheasant), the gouda soup, lamb sliders (with AWESOME tzatziki sauce) and my favorite, the coconut shrimp bisque. It was AMAZING. It had a curry note, it was spicy, and DELICIOUS!! We also had a bacon appetizer. Yep.. just bacon. How can you go wrong? They also have a variety of mac-n-cheese options, as well as other sandwiches, burgers, etc.

    The only reason for 4 stars instead of 5 was that the seats at the tables in the bar were small, backless and uncomfortable, and the fact that they closed by 8pm. Maybe they're open later on Fri-Sat, but we were bummed, because we got there around 6:45.

    The server (and maybe one of the owners?) was super friendly, and was willing to pass on my request for a possible recipe for the soup since I loved it so much. We would have all gone there again if we'd had more time before we had to fly home.

    It's nothing much to look at from the outside...but the food and beers make it worthwhile, and you if you're unpretentious, like unique quality food and beer for a reasonable price, I'd sure give it a try. If we're ever in the CO Springs area again, we would definitely stop in.

    Sweet potato fries with curry ketchup (even though i didnt taste much of a curry flavor there) were very good. Falafel was OK. Beers were decent, I tried a few .. liked the Farmhouse Walloon and it was as expected - a little funky (thats what i hoped for) .. a few vegetarian options on the menu (i do see some other reviews that mention issues on the Vegan front.. ).

    Everything here was A-OK really, If i was nearby i would stop in for a pint, but maybe find somewhere else to eat.

    I'd like to be able to write a glowing review, but I really can't. Perhaps there's a rule or something that I'm unaware of, but when I arrived I found a seat, per the sign up front. Ten minutes later, we were still waiting for a server to come over. We opted to move to another table closer to the bar, and again, ten minutes later, nothing. Finally someone came out to check on us and got us menus and offered to get us drinks. that was the first and only time we saw that person. Our beers were really good, but we also wanted to order food.
    More time goes by, our beers disappear, and you'd think we'd have lost our patience. But we're gluttons for punishment. Finally someone else comes out to check on us and takes our food order. Once we ordered food it was out withing minutes, which was awesome, but it didn't change the fact that we felt like we waited forever to even be able to order.
    The only reason I'm giving this place three stars is because the beer was good, as was the food. Maybe they were missing an employee, or we're supposed to order at the bar or something, but it just seemed really unprofessional and disappointing.
    Still loved the beer though.

    On my continuing quest to find the best of Colorado brewery's...I've now stumbled across Trinity.  Starting right off with the Awaken, Chicory Coffee Nitro Stout.  This is one of the smoothest coffee stouts I've had in the state.  It has a nice hint of chocolate followed up with a delightful coffee aftertaste.  I would say this is a great morning beer.  Also tried the Chi Belgian Pilsener which is has all of the characteristics of a great Pils.  Started off the meal with Gordo's Poutine w/mushroom gravy, this was a very good choice!  For my main entree I had the Son of a Buffalo Mac & Cheese.  This was an awesome choice to go with my coffee stout!  The one thing that set it down to 4 stars...the desserts on the menu and nothing on hand!  This unfortunately set it back...

    The brewery is a very busy place...lots of turnover on the tables and a very busy wait staff.  If you are in a hurry...you might want to think about another spot.  This place is designed with a chill nature around the home brews...no TVs or distractions...just conversation and beer with food thrown in to keep you in check!

    ***This review is from a vegan perspective, so read accordingly.***

    We were recommended this palce from several vegan friends and couldn't wait to try it.

    Needless to say, I will not be accepting recommendations from these friends at any point in the future. Trinity Brewing Company is a disgrace to all so-called "vegan-friendly" restaurants.

    First of all, the menu on their website is 4 years old and no longer has many of the vegan entrees we were going there to sample.

    Here's a transcript of a conversation between me and snotty waiter about said menu:

    Me: I thought you had vegan fajitas and chimichangas on your menu?

    SW: No, we've NEVER had those on the menu and I opened this place 4 years ago.

    Me: Well I just downloaded a menu this morning and they were both on there, along with several other vegan options.

    SW: Well, we've never had those. I'm going to go look now and see this menu.

    Me: Good, do that.

    (A few minutes later. Actually a lot of minutes later...)

    SW: Well I guess we DID have those things on the menu but that's 4 years old. We still have all of those ingredients but those choices aren't on the menu.

    Me: So can I order those meals then?

    SW: No.

    MOVING ON WITH MY REVIEW....

    I asked two different waiters if the pitas were vegan. Each one said "I doubt it", then I showed them in the menu where the hummus and pita appetizer had a vegan mark next to it. "You better make sure then," I said. They wouldn't even go look at the ingredients until I asked them to.

    Then we asked a waiter what tahini was made of. He said "Mushrooms" without blinking an eye. WTF?

    HERE IS THE TOPPER: THERE WAS BACON -- YES, BACON, A VEGAN'S WORST NIGHTMARE -- IN MY SEITAN GYRO.

    Case close, I will never go back here, enough said. They may as well take all the vegan stuff off the menu and just be another typical strip mall "brewery" serving sour beer with snotty waitstaff and gross overcooked food.

    Vegans, beware!!

    This place has incredible beer that would be difficult to find without visiting the actual place. The building is awesome, with a very green feel to it. The staff and bartenders were great and seemed fairly well versed in what they were serving. The biggest disappointment for my family was that we didn't get to stay for food as we were in a rush to our next place. We'll definitely be coming back to TRiNiTY though. It was good enough that even with the long drive back to Kansas we bought a growler to take home so we didn't have to stop tasting their beer so soon!

    Times like this, I really wish Yelp let you give 1/2 stars. This place is, actually, better than A-OK, but I am not a fan... let's just say if I was in Colorado Springs, looking for a place with some good vegetarian food, this would be a contender.

    My friend Ruben and I drove all the way to Colorado Springs as we are trying to visit all the Colorado micro-breweries we can, despite the fact new ones pop up constantly.

    The beers were ok, some were really good, most had a funny aftertaste. The food was good, I had a vegetarian gyro that was delicious but really kinda expensive for what they gave me. Basically a gyro, no sides. Surely for $12 they could throw a few potato chips or maybe a handful of lettuce on the side? I wish I had gotten a macaroni and cheese, as they looked amazing. If I ever find myself by the entrance to Garden of the Gods, maybe I will.

    With over 100 reviews, there isn't much I can say that hasn't been said.  If you like beer, this is your place.  They have stuff you already love and probably some stuff you'll love but haven't tried.  It's awesome.  They serve a wide variety of beers and a large selection of their own brews.  

    On top of that, the food was really good.  I had a salad, my wife had BLT sliders, and my son had Kobe beef sliders.  It was all great.  They have a large selection of macaroni and cheese entrees that I'm sure are outstanding.  I saw several come out of the "kitchen" and the looked awesome.  The food they crank out of a glorified closet is pretty impressive.

    I came here for lunch and to sample some local brews one day with a friend of mine.  I opted to get the sampler of their house beers.  It was a platter of 8 samples varying from light to dark.  The beers also ranged from delicious and refreshing to a bit bland and strange.  There was one that stood out as not really all that great.  I was not a fan of the Farmhouse, it left a strange aftertaste.  

    The menu is a bit heavy on the fries and mac and cheese. I saw other patrons eating these and they looked great.  I had the BLT and A.  It was delicious. A platter of 3 sliders costs about $12.  it is a nice lunch but would be better with a  small side.  

    The service was excellent and the dining room sunny and inviting.  I felt comfortable here and would consider taking or meeting friends here when I am in the Springs.

    Wow! I can't believe I've never put pen to paper regarding this place.

    I have frequented this place for years not and found myself spending most week nights in here last year while I was in town on business for the better part of the winter.

    The food here is consistently great, they care about quality and are more than willing to correct any issues you might have with your meal. Try the Grizz, it's my favorite!

    The house beers are good but still evolving, I've had world class brews and homebrews here. The saving grace is their amazing guest taps, friendly bar staff and the ability to sample if you're really nice.

    I wish I could give 4 1/2 stars becase this place is that great, if the house beers improved just a little it would be a five star joint.

    Come for a beer, stay for a meal!

    It takes a lot to impress me at a brewery, but this place definitely is on my awesome list.  I went with 13 other people and the majority us are from NY and are food snobs.  Our service was amazing - our poor waitress dealt with all of our chaos, but she did an amazing job.

    Beer sampler of 8 beers...$8 bucks and they give you a hefty sample.  I tried them  all and they were all really good.  My favorite happened to be the darker ones like Awaken.  I also swindled a pumpkin beer sample - tastiness!

    I got to try a few things there so here's my review

    Bacon cone - what more can I say from this but that I want to make love to it every morning.  Bacon..crispy,...with a infused beer maple dip - um yeah!

    Bacon mac and cheese bowl - mac and cheese with bacon in a bread bowl.  Carb heaven.  So worth the calories!

    French fries - it takes a lot to impress me with potatoes, these were really good through.  They had many dipping sauces - don't get the Chipolte one.

    Bison Jerkey - this was good, a bit on the spicy side though.  Also way too difficult to chew. I might not order this one again.

    Bloody Mary - with bacon!  So amazing.

    Buffalo Mac and Cheese - very tasty!

    I can't remember what else others ordered, I just remember there was a lot of mac and cheese on the table.

    I will go back here when I visit the Springs again.

    We came here about a month ago and I have to say that other than the decor, and feeling like we were an afterthought by our waitress, there wasn't much to remember. The beers may have been good (I didn't try them but Husband did and I think he liked them). The food was ok. Not many options for vegetarians so I ended up getting a veggie and hummus plate. It was all right. Not worth the price.

    It is kind of decorated like a beach house but without any of the beach vibe. Eh.

    I am in love. I knew I had to try this place when I heard that they put bacon in their Bloody Mary's. Uh huh. And then I tried it and now understand that Bloody Mary's sans bacon is just a naked hot mess.

    But read on my friend! It's more than their gold medal breakfast libation that won my heart. No. In fact, I ordered our server Wesley's favorite food: the black and blue sliders. I was nervous at first (not the biggest fan of blue cheese), but felt daring after two Bloody Mary's... My blue cheese came on the side, but I was soon heaping it on as if it were ketchup or something. Somehow Trinity Breaking Company had me craving blue cheese.

    There's more. It doesn't just stop with me. My four breakfast buddies also adored Trinity Brewing Company. They tried multiple beers - even having Wesley surprise them with his own selections (Spot on good man! Spot on!). It was as if they were on a magical merry-go-round of beer heaven. And they all loved their food... Not sure what they all got but they all loved it.

    Trinity Brewing Company is part of a strip mall (of sorts) and is completely inconspicuous. You wouldn't expect this gem to be there. Furthermore, you wouldn't expect the interior to a bar to be so brightly lit (large windows lined two walls of the dining area). It was casual, modern, and clean. There were one or two small children, but the rest of the clientele seemed a bit hippie or yuppie.

    Seriously, we are a critical group and we discussed how Trinity Brewing Company was the highlight of our weekend. Yeah - we loved it more than Garden of the Gods, climbing Pikes Peak, and PB & Jellies. We loved it more than staying up late playing Rock Band. Yes. I am sure that Trinity Brewing Company is my Colorado Springs soul mate.

    P.S. I got the cone of bacon. I love bacon. Not only should it be in my Bloody Mary, but it should also be served to me in a cone on the side for continuous dipping pleasure. I was only disgruntled because I had to share with the rest of my breakfast buddies who didn't think to get the cone of bacon like me.

    The Bartenders are kind of bratty and dismissive. The Food is pretty good.

    The bar stools are hard as sh*t. The vibe is strained. Something just off about this place.It's trying to be a cool hippy place, but it's not very friendly. If looking for hippy cool where you can also bring your dog and hang out, better off going to kinfolks in manitou for nicer folks and better service. And more comfortable bar stools!

    I really want to like Trinity more than I do. I've been there about four or five times in an attempt to truly love it. But ... alas. There is just too much going wrong.

    Let's start with the good stuff: The food is interesting and it follows a "slow food, local, organic" philosophy. I am 100% on board with that. The sliders are good. The outdoor seating is great, and I second a previous reviewer who said, "Extremely knowledgeable bartender. It has a really interesting vibe, especially considering it's in a strip mall." Yes. This is all true.

    BUT then we come to the bad stuff: There are actually not that many tables inside. It is surprising. Because it is all "seat yourself," you can actually show up and have no chance at nabbing a table. I wish that during busy times, they could monitor the tables a bit better. For example, it sucks to stand, waiting around, beer in hand, for 30 minutes only to have the table you were waiting on get nabbed by another group. That is highly depressing.

    Also, I agree with a previous reviewer who said, "The wait staff is apathetic at best." This is very, very true. Our bartender would randomly disappear or just drop off the food without taking our drink order while we had empty glasses sitting in front of us ... As for the food, the sweet potato fries are basically tasteless. People, come on now. I am glad you offer dipping sauces, but the sauces shouldn't provide all the flavor on what could be delicious tasty little things (visit Phantom Canyon and try theirs - oh my, so tasty).

    In short, Trinity is not worth the hassle. I appreciate what they are trying to do, but step it up. You're still running a business, after all.

    This review is solely based on the food; there are about 30 beers on tap but it was a work day so I didn't partake....The farmers salad was pretty disappointing. A few strips of chicken, canned green chilies, and a handful of black beans came atop a puny mound of "fresh greens." I feel like they may have skipped washing the veggies before preparing the salad. :-/

    My dad ordered the balsamic bacon wrap. It was taster than my salad, but it still had a bland quality. The servers weren't too friendly either...but I guess you can't expect too much when ordering lunch at a bar....

    The Good: Fun food: bacon cone, boneless dark meat wings, the pepper lottery plate. Interesting beers like the saison with Colorado wild flowers. They have outdoor seating and couches! Extremely knowledgeable bartender. It has a really interesting vibe, especially considering it's in a strip mall.

    The Bad: The wait staff (excluding bartender) is apathetic at best. Our server actually tried not to notice my table and the guys behind us trying to order more beer. We are not a bad patrons either, so I don't think it was us they were annoyed with as m uch as customers in general. In the three hours we were there between my table and the guys in the back with us, I estimate the two waitresses cost Trinity 225.00 in potential beer orders alone. Eventually, we just went to the bar and ordered and found a great guy tending the bar. I wasn't totally crazy about their beers but they were well done overall. Their kitchen is a bit small so some of our food came out cold.

    Conclusion: Nice little brew pub with cool food and atmosphere but some of the worst waitressing I have seen in the great state of Colorado.

    The beer is good and the bacon cone is great, so why the 1 star?

    Simply put: the service. I went with my friends on a Wednesday night and we ordered beers, appetizers, and entrees. It took close to ONE HOUR before our appetizer came out. We were getting super hungry, so my friend approach the bar to check on our order. He noticed that in the kitchen there were only TWO people and it seems there were some "confusion" there. At that point, we cancelled our entree and went to another restaurant.

    I don't care how good the food or the beer is, but if it takes ONE HOUR for appetizer to come out, I will avoid the place.

    PS: the bar is NOT super busy. Most seats are taken, but there were no lines or anything like that. You want to know busy? Try to go to regular bar in San Francisco downtown during weekdays... and yet I NEVER experienced the long wait above.
