This is one of my favorite Mexican restaurants in this area. They have a really large patio which is great when weather permits. The service has always been good. And their food is fantastic! They have a fairly large menu with lots of options and the prices are reasonable. It's always busy and they are very accommodating to large groups. Definitely a must if you're in the mood for Mexican!

The Food, The Drink with Salt around the Rim & the Service; are All Good!! Â
They have a great patio area for in the summer months, which is a good place to enjoy some chips and salsa/ cheese dip and some Margaritas.
Poor service but it depends entirely on which waiter. Â We've gone there often and the food is better than average (with one exception see below) and had good service, but this trip, it was almost 10 minutes to even get a waiter to come by and give chips and salsa and get drink order (I was 1 minute from just getting up and leaving). Â The food came for the 3 of us, but not a plate in sight to eat off of when we clearly stated in the beginning that we were sharing the 3 dishes. Â Watching him with other tables, he was clearly only paying attention as it came time to leave a tip, but not at other times during the meal. Â That being said, we have been happy with other wait staff on other visits.
The Shrimp Nachos were a huge disappointment, the limp nachos and less than generous amount of shrimp were buried under a large amount of lettuce. Â I've never seen lettuce on nachos.
We'll be back, but we will watch which waiter serves us.
Hands down, one of the best Mexican food joints in this area. The portions are HUGE and you definitely get more than you pay for! Every time I go to Carrisillos, the service is awesome and the food is even better. Every time I go, I either order the "Pollo Carrisillos" or the "Special Dinner." Bring a big appetite if you plan on ordering the "Special Dinner." Also, a frozen strawberry margarita is always a must! Damn, now i'm hungry for some Carrisillos!!!!
Review Source:My favorite  Mexican restaurant in the area. They have moved up the street a bit and this address is wrong. It's now located at 1978 Vandalia. We go there about once a week. Food is cheap. Servers are very friendly. Food comes out of the kitchen pretty fast. It's always hot and good.
Review Source:We really wanted to try this place and we drove on to a packed parking lot last night. However as we pulled around back to find a parking space, we saw an employ urinating by the dumpster. As we drove closer he quickly finished his business and went back inside. Even if my wife had allowed me to, there's so no way I would've even gone in after that. Â Very disappointing since it's obviously a popular place.

After seeing numerous people commenting on this place on their facebook's and such I decided it was time to try it. I had never tried it before and figured it was time to start finding some Collinsville favorite places since I have been living back in town now for better than a year.
First of all, people misjudge this place for not being the most fantastic looking joint. Sure, there are some bare bulb like fixtures and when we went the floor wasn't swept.. but once you taste this food, you won't really care.
The time it took to get our food was the only reason this place didn't get five stars. No big deal though, we weren't in any hurry and the chips and salsa were keeping us busy.
I ordered the Pollo Carrisillos and it was awesome! By far, probably the best mexican food I've had to date and believe me, I've tried a lot of mexican food. Everything arrived piping hot, and the portion sizes are gigantic for the price. The dish I ordered had TWO chicken breasts on it and with all of the rice and beans etc I threw half of it into a tupperware at home to take for lunch the next day. Two full meals for less than 9 dollars, you can't beat it. Â My husband ordered the Chimichanga Fajitas and was equally impressed.
Ranchero sauce mixed with cheese and drizzled over the chicken, yum!
Definitely a step above the rest of the Mexican restaurants in town. The only other restaurant that seems to come close is La Fonda in Glen Carbon.
