Cut Throat Cafe

Stopped here before a fly fishing work event for breakfast. Great little spot in Bailey to grab some coffee, hot breakfast and just catch up.  

The staff is friendly and knows all the regulars by first name and will even hand them coffee or soda or their drink of choice upon entry.  

I sat at the counter and ordered 15 breakfast burritos for our group and had a cinnamon bun with hot chocolate while I waited.  

You should definitely stop on your next drive along 285!

I like this place and would happily give it another star or two, but a breakfast place that does not have real butter, anywhere, even if you ask the kitchen and are willing to pay extra for it, just won't get my business.  The Cut Throat Cafe needs butter, plain and simple.  This guy does not do margarine on his pancakes and toast.

The food is tasty, but c'mon people, give us what we need... butter is truly healthier for living humans anyway... the body knows what to do with it.

When you are here, Chip and his staff make you feel like family. The prices are amazing, and food is very good, and their green chili is some of the best in all of Colorado.  The best part is they serve breakfast all day, and their breakfast is the best thing about this place.

If you are passing through Baily, this is the place to eat.  Or if you live in Baily as some of my family does, then this is where you go.  While the food is very good, this is not a fancy gourmet restaurant, its more of a greasy spoon, but if you are in the mood for greasy spoon type food, the Cutthroat Cafe is heads and tails above the rest.
