The beer selection here is pretty great and has some types I haven't ever seen.  However, the food needs some major work.  I would give that a very low 2.  We ordered many dishes off the happy hour menu and all were bad.  The tamales were horribly dry with dry chicken and had no real flavor.  The mac and cheese also had no flavor at all.  Salt can go a long way.  The salad was filled with lettuce that was so bitter that it almost couldn't be eaten except for the fact I had tons of ranch.  I will be back for the beers cause they are great, but I would skip the food.

My boyfriend and I ate here the other night for our first time and were so impressed! The food was excellent, I had the avocado chicken salad, and my boyfriend had the "frickin' chicken" sandwich. Soooo yummy. To top it off, our server Angelica was an absolute pleasure. She was very attentive and her positive demeanor and attitude were quite refreshing. We had a great time. I highly recommend checking out Flat Tail for yourself, I know I'll be coming back!

My family and I go into Flat Tail at least twice a week. The food is awesome(love the tamales), great beer (especially the Sours), and consistently good service. We always go on Wednesday nights to see our favorite server Angelica. She remembers our drink and food orders and is always very pleasant and efficient creating an enjoyable experience every time. Keep up the good work Flat Tail!

Well. Tonight the food was great. Our server was awesome and our beer delicious. However, one of the employees stole our ketchup when I wasn't done eating and then was really rude when I wanted it back. Then when she went to take it after I was finished she looked me right in the eyes and said "Are you finished with the ketchup now?" in a very condescending tone. In order for the manager to identify this woman, I will say that she was very overweight and wore spandex. I don't know her name, but I certainly should have gotten it.

I know it's the end of the night in a college town. I've been a waitress and had annoying customers. But there is absolutely no reason to make a mistake and then act like it is your customer's fault. Mistakes happen at work, but bad attitudes should not. Despite the good food and beer at Flat Tail, I am seriously considering not eating there anymore. I have came in several times since my last review on 9/2/2012 and have experienced similar service (but never as blatantly rude).

Please don't let your waitstaff ruin your restaurant, Flat Tail.

I have eaten here twice now.  Once with a big group and the second time just with a friend.  Both times with food was amazing.  I have had the fricken chicken and the turkey burger.  Both amazing.  The fries are really good also.  Good service.  Loud but its a pub so that's to be expected.  Great TVs to watch the sports.  My fiance has had beer there also and loved it. Will be bringing my parents here when they visit.

There are plenty of great things to say about Flat Tail!  A great place to hang out and watch one of the games.  Good food.  And great beer.

What I really appreciate is that they do different beers than I generally find at any of the other local brew pubs.  I'm not a fan of the overly hopped NW style of beer, so it is refreshing to see that they also have a variety of other styles readily available.  I think, just about every time I've been there, there has been a sour on tap (my preferred style).

    Thanks!

I really just can't say enough good things about this place. We first went last fall when we were trying to decide if we wanted to move to Corvallis and we loved it. Since we've moved here, we go every few weeks -- with or without kids. The food is excellent (bar food) and the beer is amazing, but the best thing is really the service. Every person that works there is smiling, friendly, and provides amazing service -- the employees are the bubonic chronic. I recommend every beer that they have on tap. Consider going during happy hour -- fried pickles, mac and cheese, fries, nachos -- it's all good.

When the Beavers were in the bowl game, we went here. There was a wait at the front door, so we got a couple of beers and settled in. We waited for an hour and a half with our two kids (10 and 6) and decided to pull the rip cord. When we tried to leave, the kids cried -- they love Flat Tail. So, we decided to stay and wait longer. The hostess brought the kids free fried pickles and shortly we got a table to watch the rest of the game. Again, the employees, the food, and the beer are amazing.

The worst experience of my life. The waitress was rude, forgot part of our order, never checked back, then when we told her how about our experience, she said to never return. That's when I responded with, "Oh PLEASE allow me to come back and experience awful service from you again!"

A good replacement for the Fox and Firkin (the restaurant that was in this location before). Typical pub/bar food with lots of beer and cocktail options. The Thai shrimp wrap was great!

Having gone to the University of Washington, I don't really understand the excitement over a beaver and some orange and black, but I have to give this place mad props because there was no lack of school spirit.

Even though I ventured in here the day before the Civil Way, almost all of the diners were decked out in gear and all the waitresses were dressed to impress even the most die-hard OSU fan.  There were even orange with black polka dot balloons sprinkled throughout the dining area.  I am now determined to find some similar balloons in purple and gold...

The place was busy, but despite it being full, the service was great.  Our waitress wanted to make sure we had a great dining experience (and more importantly that we had the right beers based on what we wanted).  I had a half pint of the Tailgater Kolsch (it was only $2!) and thought it was a great lighter beer. To start, the sweet potato tots with a chipotle ranch sauce were delicious. If you want a healthy entrée option, the Mash Tun salad is a great choice since it has an abundance of hazelnuts, avocado and red peppers on top.  It was great paired with honey balsamic dressing.

The location is also great since it is centrally located near other shops in the downtown area.  It was great to enjoy a meal there and then walk around the area without having to move the car.

Whether you are looking for a spot to watch a game on one of their many tvs or just grab a great meal (with some delicious brews), Flat Tail Brewing will not disappoint!

The beer is the Star of the show; the menu sounds great, but the execution leaves something to be desired--much of the time, the radio works the same way. Also while the service is friendly, this is not a place you go for a quick bite.

A solid choice for tasty food with no frills attached. I've been here a few times on my own and a few times with groups, and I've never had food that wasn't good. The burgers are excellent, whether you go for the basic but outstanding Flat Tail burger or one of the assembled creations like the drunken onion. I highly recommend the sweet potato tots to go with (with the sauce they provide; no need to debase them with ketchup), and frickles make a good starter.

I've found their beer to be ok, but not great. There's a few choices that are pretty reliable, but they also make some beers that are, shall we say, rather inventive, and the tastes I've had don't make me want more. Call me old fashioned, but I don't like chili peppers in my beer.

The service can be spotty. I've never had bad service or a rude waiter, but it's also not fantastic. On a recent visit, my table waited longer than necessary for drink and food orders. It wasn't outrageous, but it was noticeably longer than it should have been.

Great food and best service I've had in years.

We were in Corvallis for the day and found this little gem of a restaurant.  We both had DELICIOUS burgers and it was hands down the BEST service I have had in years.  I'd recommend it to anyone stopping through or looking for a good burger and a beer in Corvallis.

They even have sweet potato tots (super good) and delicious beer that was slightly different than what we usually get in Portland.  They also had TONS of TVs, and we love a good sports bar where you can watch pretty much any game.

They really exceeded my expectations, and if we are ever back in Corvallis we will be stopping by here again for a meal.

Definitely a good place to watch a game. Food was solid and the drinks were strong.

almost an extra star for the prices (although, that's kind of an Oregon thing).

oysters will run out so get your shooters while you can.

off the happy hour menu: the chicken tamale was really big and filling but the chicken tenders we definitely the best thing we shared. however the house salad for just $2 really limited my guilt on a day when I think we had FourLoco and tacos for breakfast.

I talked my husband into trying Flat Tail because we ALWAYS go to Block 15 and we were both very disappointed.  I gave it two stars because the beer was good. The food had no character and all the staff looked depressed and unhappy. Whoever is managing this place is not trying very hard. The other brew pubs in town have set the bar much higher.

Big fan of their IPA. Very light and crisp. Their burgers are really pretty good but their other "non-pub" food leaves a little something to be desired.

This is really a review of Yelp, which failed to steer us to the great brewery pub while we were passing through Corvallis and attempted to search in vain under  "pub"and "brewpub" for a place with locally brewed beer.  Suffice to say that we were walking around downtown and noticed this crowded place that did not appear on any logical Yelp searches.  The house-brewed beer was excellent, the pub food was well above average,  service was great.

I usually LOVE places like this, I love the atmosphere of a good brew pub but this fell short.

The Good: SWEET POTATO TOTS! The only reason I go back here is for these. You cannot go wrong with them and that amazing honey chipotle sauce.

That being said, the inside is horribly decorated. There is nothing unique about it. The chairs are uncomfortable, the floor is blah, the bar is blah, the walls are blah. I am not saying that a brew pub needs to be decked out like a Ritz Carlton, but I expect some unique features beyond what is hanging on the wall (which, by the way, there are things on the wall in cheap frames).

I had the Cuban and while it was ok, it was so salty even for a salt lover like me. My fiance had a salad, nothing special.

Ultimately, Flat Tail needs to step it up a notch to continue competing with other great local businesses including Brew B. Q. and Block 15.

The service was prompt and friendly.
The beer was dull and lifeless.  The porter was lacking in flavor - such a crime.  It seems that every flavor I tried left me wanting.
The food was mediocre. I had a Cuban Sandwich that I would be shocked to find in Cuba. The pork was underseasoned and boring. The pickles tasted like they came out of a jar off the grocery shelf. Even the mustard was dull.  I had high hopes for this place was very disappointed.
The 2 stars are almost entirely for the friendly servers.

Being so Beaver Believer-ish, I had my reservations about Flat Tail. I know it's in Corvallis. I know that OS(U) is located there, as well. This is all very appropriate. I, however, am not a Beaver Believer and in fact, am quite partial to the Duck, having grown up in Corvallis but graduating from U of O. All of my reluctancy towards the decor aside, I'm a huge fan of this place!

I'm sure I went to the Fox and Firkin at some point growing up in Corvallis, but prior to Flat Tail, I always ran right over this location in my mind's eye when thinking about Corvallis eateries. No longer...Beaver regalia and all.

I tried the pretzel sandwich and the Cuban, both were great and totally worth suggesting and ordering again. I had an apple beer that was tasty and I tried a lot of different beers that were ordered by our party. The selection was impressive and the food did not fall flat. There were sweet potato tots, which, I'm going to say it...don't rival McMenamin's cajun tots, but they were pretty good.

This place is chill and I suppose sports bar-y, though I only say that thinking about how it's been billed to me. It was also pub like and friendly, which is more my style. A little of both never hurt anyone. Just like a little Duck action here or there might not be a terrible suggestion for the decor ;).

Keep on Believing Beavers, and I'll certainly be back for some more (of the food!).

The first time I came to Flat Tail I thought the waitress was the only problem as she was slow and not very personable. I decided to give it a second shot and was equally disappointed if not more.
I love, love, love beer and unfortunately the poor service I have received a second time overshadowed the brew. The waiter confused our tables beers, there were four of us and I am fairly certain forgot we ordered food. 45 min later and our 1 order of chicken tenders were still not at the table. We asked about the appetizer we ordered and 15 minutes later they showed up as we were leaving.
We sat at our table far too long just to have been checked on once for a refresher of what is delicious beer. Service makes it not worth going to Flat Tail, I will enjoy their brew elsewhere.

[+] Came here with two of my girlfriends to chill. We all ordered some kind of delicious sandwiches that filled our tummy. We spent the entire night chit chatting away and surprisingly the waiter did not rush us out as we've already done with our dinner. He even kept on refilling our empty cups with water to rehydrate our throats from talking so darn much! The service was prompt and the food was tasty with a decent price.

[-] The interior of the place needs a bit of remodeling/or designing of some sort. Although it is set up to be a 'bar' type deal, I think they can do a better job than having it look kind of plain/hollow. By the way, the entrance to this place is so weird! They definitely need a better entrance door because the one they have now looks like a backdoor alley way that leads to somewhere else other than the restaurant. Also, I wish they had homemade root beer, then it would totally complete my meal!

[?] Yup, I would love to come back here to try some of their other sandwiches!

I'm not sure why I was so resistant to Flat Tail before...it might have to do with their carpet, or huge flat screens on every wall, or bad fung shui or something. But today, after my third visit, I'm ready to say that I did enjoy my meal here, and also every other sandwich I've had previously.

Now, we aren't talking about anything miraculous. But they do good, interesting, tasty, and filling things, and for that, I give it...3 1/2 stars.
    I've had and recommend:
    Black and Tan
    Old South BBQ
    Jerk Chicken
    Brisket (ask for extra sauce)

I would not recommend the sweet potato tots though....not a pleasant texture, and the taste was pretty lost somewhere in there too.

Service is always friendly and efficient, beer is fine.

I have impressed friends, acquaintances, relatives, confederates and the homeless man over on Mission Street into service in my tireless search for Caribbean Jerk Chicken. One of them came through for me with the suggestion to try this place.

In a perfect world, they would offer hand rubbed, wood roasted Jerk Chicken dinners, but alas, a Jerk Chicken Sandwich had to do. The seasoning was the rub type and not the sauce/marinate which is often just poured over the chicken, not really imparting an integral flavor. The Sandwich was good. I opted for a side salad, not being a fan of the big, fat "home style" Fries. My bride had a remarkable Salmon, Cream Cheese and Caper Sandwich on a Pretzel Bun. It was fantastic! She also had a cup of average-to-good French Onion Soup. I tried a glass of Flat Tail (believe it or not, I only just now put together the OSU Beaver reference) Stout, which I thought was a little thin. I sensed a Guinness "Draft" influence. I like a stout that almost requires mastication!

The drive to and from Salem was pleasant. On balance, we enjoyed our meals. Almost 30 bucks (including gratuity) puts a real strain on my lunch max number.

If you find Jerk Chicken offered anywhere in the mid-Willamette valley, please point me at it! Thanks, in advance.

This place has done nearly a 180 since first opening. The service is outstanding and the food even more so. I don't know if they did something to address the noise levels, but it seems slightly quieter now. The beer is now brewed on premise and overall above average.

Still think they need booths to up the class and give the option for more intimate seating. And the beer can be inconsistent. Some recipes have been outstanding, while others just so-so. But the food is so awesome (like the sweet potato tots or the Ring of Fire burger) and the beer usually so, that I can strongly recommend it.

Last week I was showing some CEOs of a company that is considering moving their business to Corvallis.  They'd been on the road and said they were tired of "box lunches" so I took them to Flat Tail. As always there was a good lunch crowd. A couple of us had the Avocado Salad, others had the Jerk Chicken Salad, Vegetable Beef Soup and The Beaver Dam Burger (it has an egg on it).  I don't think that any of our entrees was over $10.00.

Our meal was great, the service as always was excellent and Ian D. stopped by the table to talk about his decision five years ago to buy a local business and move to Corvallis.

Well I have been here a few times and I have yet to be overly impressed. The food is average and service 2 out of the 4 times was sub par. I'll give it a couple more trys because I really like supporting new local businesses when I am in town.

I do have to say that the biggest draw for me has always been the outdoor seating. It's a hard thing to come by in Corvallis and you're not going to catch me over at McMenimens again.

My advice is go in check it out and see if you find it a good alternative to the other brewery/bar offerings in Corvallis. Just remember to make local habit.

Friends and I were up to play a gig at the Belle Vallee wine bar and stopped in for a bite afterward. It's your typical run of the mill college dive with black walls and Beaver paraphernalia looming large and service that was fast but not necessarily friendly. Four out of the five of us really liked our meals and would come back again.

I ordered the Muffeletta, which I thought was really cool because I've never even seen that on a menu in Oregon and it was REALLY good. The salad that came with it had dark and varied greens and good bleu cheese, which shows they care about the quality of their food. Other items ordered were the Black and Tan sandwich which I tried and really liked, a chicken mustard sandwich and a mozzarella salad of some kind. The friend I had that didn't like his meal ordered a shrimp wrap and he said the shrimp was past it's prime and over cooked. He took two bites and left it. A few others sampled it and agreed that it was pretty bad. Can't speak for the beer, as I had had enough vino over at the winery and was feelin' pretty good.

So... in a nutshell there's lousy atmosphere, but decent, moderately priced food and it's Corvallis! Gotta love that!

My gf tried this place on opening night and was less than impressed.  I decided to give it a couple months and try it myself to see if they'd found their groove.

The location, I've always like this place and the outdoor seating is excellent.

Beer, good selection and what I had tasted great.

Service, I'm really hoping this girl was new.  She took our drive orders, forgot that she'd even got them, and asked for them again *cue twilight zone music*.  We ordered an appetizer that never arrived, but showed up on the bill, she more than happily removed it.

My sandwich arrived wrong, had to be sent back, and they simply scrapped off the offending slaw, also loosing some of the meat.  The taste was ok, but nothing worth writing about.

I like the idea of this place and I'm really pulling for it.  Hopefully they'll get their act together.

It's no secret to many that my first couple experiences at Flat Tail left something to be desired. However, the owner was pretty receptive to my feedback (IN PERSON) and I committed to checking the place out again once they'd been open a bit longer.

I met Ryan Gardner there for lunch today. When we arrived, I intentionally asked for an outdoor table: one, because it was beautiful outside, and two, because I've heard and read so many complaints about the noise level in the dining room.

Our waiter was great (Eric Mansfield). I've seen him at a couple other local joints, and he seems to have really found a place he enjoys. Real prompt and attentive but not annoying.

I can't remember the name of the burger I ordered, but it had avocado, peppered turkey, a fried egg, crispy bacon, and grilled onions on it, with cheddar cheese. It was insane. I would not have thought of turkey, beef AND bacon on the same sandwich, but it was rad. (and I'm sure, calorie-filled).

I asked Eric for barbecue sauce to dip my fries in, and he happily brought me a cup of each of the different kinds they have- Maple, Buffalo, and Siren (I think that was the name, or maybe it was "hotter than hell" not sure) The BBQ sauces were all good, and the fries have been perfected since my first two trips.

I had a glass of Stout and it was pretty normal. I'm still looking forward to enjoying some beers with more character once they open the brewery portion. For now, the options are a bit sleepy.

Overall, I was one happy camper following that burger and those fries. Total cost with the beer and a tip- $17. Pretty spendy, considering I try to shoot for about 5 or 6 bucks for lunch (think "young business owner" with family), but it was a nice treat.

I will go back again for that burger.

Based on beer and service alone this place is four stars. I would recommend getting the sampler paddle because all of their beers are amazing, especially the seasonal scotch ale they have going right now!

My problem is with the decor, or lack of. I know this is Corvallis, not a metropolitan area, but I like a little atmosphere with my beer. This place feels sparse and severely under-decorated. I'm not saying I want it to have a bunch of goofy sh*t on the walls, but it just feels so bare. I just would like it to look like they put a little effort into the place.

Flat Tail has decent food with some unique items on the menu.

Subsequent visits have improved my opinion of the place. The large interior room can still be unbearably loud with a full restaurant and the tasteful minimal decor has now is no longer so minimal as sports paraphernalia has been added to the walls. Sit outside or go during a quiet time and the noise won't be an issue.

Why is there no Q in barbecue?

I've eaten here 4 times already, and Its solid good food with seriously delicious beer.

Favorite app? The peel and eat shrimp with BBQ sauce was delicious. The shrimp had that nice sweet aftertaste, and a great bite to it. I was afraid our friends from the Netherlands were going to turn into happy mermaids after tasting them, the raved so loudly...I was sure they were going to squeak so loud they'd break all the TVs in the place....and there are a LOT of TVs in this place!!

I think the fries are stellar....crisp without being burned. Ask for a side of the cilantro ranch for a stellar experience, or try one of the three house-made barbecue sauces with them. The potato skins are another highlight....topped with smoked brisket, cheese and sour cream, they did not disappoint. The fried okra is good, with a plentiful amount delivered. The crabby bread was good, but not great.

As you can see, I've eaten my way around the appetizer world of Flat Tail, which tells you that I'm really here for the beer. Its good. Not as much variety as it's sibling in Albany, Calapooia (a great place to go in Albany, btw) but the seasonal brown ale is delicious, as is the wheat beer.

The salad with grilled chicken and cilantro dressing is huge and delicious. Its a bargain for what you get. The burgers are good, and the brioche bun helps elevate it. I need to go back and try more menu items. (note to self)

Friend from Tennessee had the brisket sandwich, and gave it her blessing, which is good enough for me. Hubs had it on a subsequent visit, and if his shirt stains are any indication, it was juicy and delicious.

The staff has been very accommodating to us. Especially when you consider that we've turned this into a pre-game tailgating session for our large group of out of town Beaver Basketball friends and family. They think nothing of bringing 3 tables together for our crew, which has been as large as 18 once. Yes it took over 20 minutes, and the waiting area is small, but we hit it on a beautiful spring day, and took advantage of the weather and walked the newly developed river side promenade....why wasn't that there when I went to school here?

The place has beautiful high ceilings, and the noise bounces off the newly painted walls, but I can imagine this place gaining Beaver memorabilia as the months and years go by, and they will soak up the ambient bounce. They could stand to turn down the music once the rush is gone, though...it was blasting after a big lunch hour one afternoon, which made it hard to talk across the table.

Overall a solid choice for great beer, good food, and good service.

This is by far one of the worst places I ever been to.

First off, the main entrance is not easily noticed, after my party and I walked around to the wrong entrance we returned to the correct side of the building where the entrance actually is. The main entrance looks like a staff door, and is not inviting to the public at all. Once inside, it seemed to appear nicely decorated by the view of the bar as the hostess took us to our table but once we got there, I felt as if I was eating at a bowling alley and not at the 4th restaurant of a couple who owns nicer establishments in town.

With that said, one would think that this place would have a better thought out menu, but everything on the menu was left to imagination. No accompanying sides are listed "What am I getting with my burger?" and you think you're getting a cut of brisket when in fact you get a sandwich. The crabby bread that we ordered as an app was entirely overpriced for what we got, I could easily take lump crab and pita bread and make the same thing. The burgers that we ordered did not taste like beef, but like Elk. The brisket really let the men in my party down, as they were looking forward to a nice cut of bbq but when our order arrived it was a sandwich slathered in mayo. The picture below is what we thought we were getting but we didn't receive anything that looked close to that!

All in all, this place is ridiculous. If you want a good brewhouse to go to definitely do not stop here...look elsewhere in Corvallis and Albany.

Being the first customer at a new brewpub has it's perks...and kinks. Part owner and restaurateur Ian Duncan greeted me at the door and I got my pick of tables. I chose the riverfront view table in the NE corner and loved looking out over the river and riparian trees over lunch.

The menu selection has good variety of standard American brewpub fare with a distinct south-eastern US feel. Four varieties of home made southern-style BBQ sauces complement the meal selection well.

We tried an appetizer of "crabby bread" before lunch and sampled three of their beers (IPA, porter, stout), all of which were good. For lunch, we ordered "The Old South" southern pulled pork shoulder sandwich with the smoked chicken and corn stew and the "Blackened Rockfish Po' Boy" sandwich with fries. The pulled pork was pretty good, tender, and not over- or under-cooked but could have used a bit more flavor. And the rockfish po' boy was pretty good, too - spicy but not overly so. The smoked chicken and corn stew was delicious - smoky mixed with slightly sweet and spicy tones. Of special note, none of the food was greasy, fries included, as much pub fare tends to be.

Our server Brian was extremely courteous and quite attentive, considering the crowd that had begun to gather for the inaugural lunch. Speaking of which, the first couple of dozen patrons were almost exclusively men of differing age ranges - young college crowd to middle-aged business men. As the lunch hour wore on, more couples showed up and the crowd became a good mix of young and older, men and women, college-type and business-type.

The only kink, which I viewed as amusing and understandable given it was opening day, was that none of the prices on the check, save for the pint of beer, matched the prices listed in the menus. But I found that part of the charm of a local place just opening and don't hold it against them in the slightest.

The prices, incidentally, where a bit higher than the typical Corvallis pub fare but still within the range of prices paid at other pubs in larger towns. Expect to pay $7-$12 for appetizers and $9-$15 for meals. Beer prices are $4 per pint.

All told, I enjoyed my dining experience and will be back when they start brewing their own beer.
