Sweet Baby Cheeses

My first visit:
I absolutely LOVE cheese and I was really looking forward to trying this place.  I've walked by it a few times at the mall, but the menu never really grabbed my attention enough to stop and learn more.   I finally decided to try it after receiving a buy one, get one coupon with the ads.  I ordered a plain grilled cheese sandwich and my wife ordered a grilled cheese sandwich with spinach and mushrooms.  I had a side of chips and she had the tomato soup.  Our food was made to order quickly by a very friendly staff.  The food looked and tasted pretty good, but it wasn't a very filling meal.  I guess this is expected for a a lunch, but I was still a hungry after the meal.  My plain grilled cheese was OK, but it lacked the "wow factor" that I expected from a place that focuses on grilled cheese.  My wife's spinach and mushroom was delicious and so was her soup.

Pros:  
Quality ingredients, Friendly service, Some creative spins on a classic dish

Suggestions:  
Introduce a revamped "plain" grilled cheese on big Texas toast bread and lots of cheese.  
Dipping sauces for the grilled cheese sandwiches would be a hit.  
Mac 'n Cheese would be a good side dish.  
Higher quality pictures of the dishes on the menu would be helpful.
Provide larger portions or lower the price a bit

Would I return?
Yes, but I'll wait until I get a coupon or deal to try it again.

It is about time Evansville has good food options other than hamburgers or sub sandwiches.  Sweet Baby Cheeses is awesome!  My favorite is the Caprese, but I am a sucker for pesto and mozzarella.  Try it.  You wont be disappointed.
