We recently ate here for my Mom's 60th birthday. We had a party of 10. When I arrived I scanned the yelp reviews and was disappointed to see some really negative reviews (especially the older ones) but my parents explained that they had a new chef, and he was really good. (Which turned out to be true.) And we also had an amazing waiter, a guy named Dru, who's probably one of the best waiters I've ever had.

The chef sent out complimentary ceviche (I'm assuming because it was her 60th) and we tried the Passion Fruit Ceviche and the Rocotto Pepper Ceviche. These were delicious. I mean, AMAZING. Everyone at the table talked about how good they were.

Next I had the crab salad, and this was good, but a little heavy on the dressing for my taste, but my mom loved it. (She had a few bites.)

I had the special, which was whitefish with clams, chorizo sausage, and a saffron broth. This was quite good, but not as amazing as the Ceviche.

For desert, I had the Bombon Cubano, which is a flourless chocolate cake with tres-leches ice-cream. Holy @&!#, the ice cream was AMAZING. This was really, really good.

I want to mention our waiter again, Dru, who was one of those guys who was just there the whole night, super on-it and friendly. This is the type of guy who MAKES a fancy restaurant, because the service was exceptional.

I'd say the food was actually a 4.5 star, the service a 5 star, but the ambiance of the restaurant, while very trendy and attractive, is really noisy, and it's hard to hear, so I'd put that closer to 3 stars. Overall, I think this place deserves much better reviews than it gets. It's really fabulous.

When we booked our stay at Costa d'Este we also made a reservation for The Wave. I read the mixed reviews and wasn't sure what to expect for our dinner experience.

We had a wonderful meal! Being big fans of yucca fries, my husband and I decided to start with an order of them and they were fantastic. I ordered the Pollo de Churrasco and it was great, but the highlight of my dish were definitely the sweet plantains. My husband enjoyed the ceviche sampler and said he would order it again along with a caesar salad.

We ended our meal with the key lime tart and raspberry sorbet. Phenomenal! I'm not even a huge key lime fan, but I'm pretty sure I could eat that dessert every day and not get tired of it.

The service and overall experience was great and I'd definitely eat there again for dinner.

Overrated, pretentious, and possibly the loudest restaurant in America. It is impossible to carry on a conversation with dinner partners. Food is only part of a dining experience. Atmosphere is also important, and that was definitely poor. If you don't mind not talking to your friends at dinner, then this is the restaurant for you. The decibel level may violate OSHA guidelines, I don't know. We left and won't be back. if you want a fantastic meal with a cool atmosphere go to Will 55, instead.

We recently dined at The Wave and were extremely disappointed. The server was not knowledgeable of the food and the food was way salty.
First, the calamari was sooo salty we could not eat it. No one seemed to care and again, they took it away without offering to replace it.
Second, I am pescatarian and do not eat farmed salmon - I had asked the server if the salmon was farmed and she said it was not. So I ordered it and indeed it was farmed, which the management confirms. Didn't offer to replace with something I could eat and not apologetic.
Expensive errors for me. And I ended up going to a bar to get a salad.

Not impressed. The food is hit or miss; some dishes are great and others are lacking. This is a huge disappointment when you consider the price point. If I'm going to spend $35 on scallops, they better make my mouth water! Instead, they were too peppery, while the flavor of the pesto risotto didn't seem to match the scallops at all. There were only 4 scallops and, yes, they were jumbo, but I was not impressed. The paella was good, not great. It's a much better deal when you spend the $50 to split it between two people. The one-person paella for $30 is mostly rice and chicken with 1 scallop, a couple shrimp, a couple chorizo, you get the point. My husband raved about his Cuban steak ($27), which he has ordered twice now. It comes with rice, delicious beans, sweet plantains, and yields leftovers; definitely one of the better dishes. The beef tomato and mozzarella appetizer has been inconstant - one time we ordered it and it surely was large beefsteak tomatoes, but this time it appeared to be sliced plum tomatoes with mini mozzarella chunks. The calamari app is standard and predictable. The shrimp and chorizo dip was unique and very tasty. The bombon dessert ($6) appears to be a very small serving at first glance, despite the fact the server said it was big enough to split, but it's so rich, you'll be gone after a few bites. The interior decor is very modern. There was a band playing, but the acoustics are horrible so the live music is too loud making it hard to talk. All in all, I'm not very impressed. We've been a few times and they're lacking consistency. And, because of that, combined with unimpressive dishes, I feel that they're way overpriced. I don't care to go back at this point.

It is hard to review this place because I really enjoyed coming here to enjoy drinks during our stay at the hotel. I would give it 5 stars on the bar alone. However, every time I ordered a drink it turned out very different.

The food, I would give 3 stars. It was good, but nothing too impressive.

I did love the ambience here though! And the booths were super comfy!

We recently dined at The Wave while staying at Costa D'Este. We had lunch there overlooking the pool and enjoyed our experience. The decor is chic and modern, and the restaurant is very clean.

For a starter we had a ceviche dish. It was just ok, nothing special. In fact, it seemed a bit too "fishy" tasting if you ask me. We ordered the club sandwich, which was delicious! Both sides of the bread were buttered before perfectly grilled, and the fresh avocadeo added a zing to the sandwich. The french fries were perfectly crispy and salted. For dessert we had the key lime tart, which was to die for!!! The graham cracker shell was thick and buttery. It was served with whipped cream, berries, and a rasberry sorbet. YUM! My lips are watering just thinking about it.

It is pricey, but we felt great after eating the food, and it was clear that it was fresh.

I'd definitely recommend it to diners in the area.

REVIEW UPDATE:

This is the link to my last review http://www.yelp.com/biz/…

In a nutshell, I was not a fan.

I had no choice than to return to dine here because the hotel package we won in a silent auction included a meal here. We opted to take the credit instead of doing the tasting it specified.

I realized instantly that the DJ was now gone and replaced by live music. Not sure what the name of the band was (jazz) but they were great and not too loud to interfere with conversation. The DJ was fun too I thought but the band gives it a more sophisticated vibe.

Service was good throughout the night. Things we ordered included:

Caprese
Spinach & artichoke dip
Wedge salad
Surf & turf
Lamb chops
Filet mignon
Maine lobster
Cuban shrimp scampi
Cafe con leche flan
Guava cheesecake
Rice pudding
Flourless chocolate cake

Everything was very good this time around. I did not get to taste everything but the entire table seemed pleased. The lobster and guava cheesecake were my faves. Towards the end I asked if they had cortaditos and the waitress said they did (like they did last time). Someone (not the waitress) came over to tell me there was a problem. The problem is that they had ran out of condensed milk. Blank stare. Condensed milk for what? the desserts? She said "for the cortadito". This is news to me and I am Cuban born but I have never heard of a cortadito with condensed milk and I LOVE condensed milk! Maybe Cubans in a different region make it that way? I told her that if they had regular milk and espresso they could make my cortadito that way. Problem solved. What I got was a tiny cup of what seemed to be American coffee with a little milk. No froth. No crema. Nada. The kicker? the cup was dirty dripping from the coffee AGAIN! (see photo I added) If you read my last review it says how they served my cortadito in a MUG and how it was also dirty then. It's as easy as wiping it before serving people. C'mon! Insert eye roll here.

I am choosing to ignore the coffee DEJA VU and still give it 4 stars because everything else was greatly improved, greatly enjoyable and delicious. In addition, the poolside menu is really good! We sampled the following:

BBQ Pulled pork sandwich
Crab cake sandwich
Cuban sandwich
Sliders
Chicken salad
Yucca fries

We were all in love with the Cuban sandwich. So tasty! The cheese came melted beautifully and the sandwich was pressed just right. It's no wonder we came back for it the second day. The yucca fries were also stellar! I had to fight everyone off my stash!

If only they could learn to make a proper cortadito. It is after all a hotel designed with Cuban flair and owned by the Estefans isn't it? Dale! Que pasa?
Get it together!

I liked this restaurant a lot. We had dinner there one night and lunch the next day.

Excellent Cuban style meats, great black beans and rice. I hear the plantains are great, but I am not a fan. Also had the ceviche on two occasions. It was excellent. Three of our group had the Cuban Sandwich for lunch which was also very good.

Ate at the bad for dinner. The bartenders were not the funnest guys in the world but the service was OK.

Lunch service was about the same.

If you like Cuban style food then it is a go.

Staying in Vero for an extended time and we have been trying all different places at dinner. Went here in a Sunday night and the bar was empty, which is a good thing for us, when we just want a quiet drink. It was so comfortable that we decided to stay for Tapas. Lollipop lamb hops, spinach dip, and brisket sliders that were to die for. Most favorable thing I ever had. Got a second order. Bar started filling up a bit but not at all crowded and we will be back.. Bartender, being very full of himself cost them a star.

Service was just awful - waited for more than an hour for entrees. Must have held-up order for Paella, as that was the only dish that was warm.

My wife's Cuban skirt steak was literally charcoal - had it not been a celebration for a friend and her recommendation, I'd have sent the food back, it was that bad.

Lighting is trying to be chic, but was so dark that the waitress had to use a flashlight when we had a question.

AWFUL EXPERIENCE ALL THE WAY AROUND.

We enjoyed a weekend at the Costa D'Este, The Wave Kitchen and Bar is located in the lower level of the hotel with a nice view of the pool and beach from the dinner tables and part of the bar.

Greg, the bartender on service on our visits can mix an awesome drink. There are a list of "Festive drinks" and Greg will mix as is or with some customizations happily. He's attentive and a pro bartender. He took great care of us for afternoon drinks and after dinner drinks and dessert. A+

On our first visit to the bar we enjoyed an app of Spinach dip and pita, very nice and made to order. Not too cheesy, fresh and makes you realize that this standard app could be kicked up a notch at other places. Great with welcome drinks and encourages us to order another round and stay a bit. Highly recommend the Passion Fruit martini.

After dinner out, we headed back here for drinks and the bar was packed. Some people ordering apps and drinks, some people enjoying drinks while waiting for their dinner tables in the restaurant portion. We enjoyed seating at the bar tables and took in the scene, chatting with people around us. Friend ordered dessert, the flourless chocolate cake, with Tres Leches icecream and it was great. Drinks were once again, awesome. Thanks Greg.

Sunday Brunch/Breakfast was enjoyed, Cuban french toast and bacon for my friend and an omelette for me. Delicious. Coffee is wonderful, even the Decaf.
