Okay, I went back to try the guilotas today! It was quail sauteed in a hot red salsa/tomato sauce, not finches. I really dug it although perhaps I am just so excited by this place, everything is tasting good. Anyways, it was sauteed very crispy so it had a nice crunch. I think this was my first quail and the flavor of the bird didn't really stand out from chicken or cornish hens. It was really good though and the cheese slices with the creamy beans was nice. the last things on the menu for me is the sesos and the tejuino drink. my first attempt for the sesos. i had the tepache last summer (fermented pineapple) and it definitely tasted like fermented pineapple juice. i guess that's not for me.
