Found Circle City Spuds parked in front of the Indy Central Library. Only my second day since moving from Los Angeles so I had to stop by to see if the food trucks in Indy can compare to the L.A. food trucks. CCS didn't disappoint. I didn't have any spuds, but I did get their special of the day ($5): 2 pulled pork sliders with a side of cole slaw and Fritos. Loved the pulled pork! The bbq sauce was slightly spicy with some tang...very good! I think they used King's Hawaiian sweet bread (I could be wrong), but it tasted very similar and accompanied the meat and sauce perfectly. The cole slaw was awesomely delicious. It was slightly spicy (I tasted horseradish) and sweet. Went well with the bbq pulled pork. I will definitely seek them out to taste more of their food. I saw they had a mac n' cheese stuffed spud. How awesome is that?!

They're big, they're perfectly cooked (not underdone, not overdone, but just right), they're heaped with delicious toppings and they are MEGA satisfying.
Chili, pulled pork or bacon for a carnivorous craving.
Cauliflower, broccoli, carrots and green onion for a vegetarian palate.
Shredded cheese, cheese sauce, butter and sour cream for the lactose tolerant.
And, nacho cheese and jalapeños for the spicy heat seekers.
Who doesn't love a baked potato? This place aims to please and hits the target dead on.
This ain't Great Grandpa Flatley's potato, this is one deliciously far out spud! Â Imagine gourmet baked potatoes that are piled high with some of the best comfort food around, served for your optimized mobility. Â I sampled the Brickyard BBQ Spud: a humungore baked potato dressed with slow-cooked bbq pulled pork, cheesy carrots/broccoli, peppers, hearty bacon, and a [healthy] dollop of sour cream. Â Holy Mackerel, what a 'tato! Â They also have a couple more variations (some crazy mac&cheese version of the Brickyard) and a few vegan options too. Â Give them a try, this truck won't disappoint.
Review Source:Shut the front door! The backyard bbq spud is incredible! A baked potato stuffed with pulled pork bbq, broccoli, cauliflower, carrots, cheddar cheese sauce, shredded hot pepper cheese and crispy crumbled bacon, sour cream, and butter. It  is certainly big enough to share, but if you are like me there is no way you will let one bite get away. I was assuming the menu was all potato based, but they also have a BLT, chili, quesadilla, salad, and soup. Total comfort food that is made simply, straight forward, and delicious.

Here's the secret to making me happy about food: make it really affordable. Cheap is good, free is best. So without revealing the great business practice that lead me to be so pleased with Circle City Spuds, I will simply say that they made me really happy when I came to the truck. I was recognized! Me! And I had a spud for it! Me! Actually, I did not have the chance to try their classic spuds, which favor other toppings, but no mind, as chili is undeniably my favorite food. Put chili on anything, and I am also happy. Their menu for the Super Bowl is a little bit more Game Day, a little less gourmet, but that doesn't bother me at all. I had a great potato. And let me say, having had baked potatoes from a cart in Paris, I feel like I can be a good judge. That's the rule, you know? If you've had it in France, you've got a high point of comparison.
So though it was very cold, and I was walking while eating (places to go, people to see!), Circle City Spuds' spud did not disappoint: piping hot, heaped with toppings, rich and cozy in flavor. It kept my hands warm as I walked, and I probably had no less than half a dozen people stop and ask me where I had gotten it. Either because of how tasty it looked (and was), or because of how tasty I was making it look, Circle City Spuds was getting everyone's attention as I walked around. I'm not sure if their chili was homemade, but it was rich, full-bodied and meaty. I don't go too much for the fancy chili on a day-to-day setting, so when I want a classic-sounding food like a chili cheese potato, I don't need schmantzy chili. Good there. There was both fresh shredded cheese and nacho cheese (mmmm! I had just gone to the gym and totally justified it that way), and a little pack of sour cream to top it off. I distinctly remember being totally impressed by the onions at one point too, which says something, as I am not an Onion Person. They were crunchy but soft, not overpowering in their flavor. Good work on that!
Prices for Circle City Spuds are totally comparable to the other trucks. To be fair, it's hard to keep this as a criteria for evaluation, because it's clear what market price is, and none of the trucks are majorly over- or under-cutting the price. But, if you're a potato fan, Circle City Spuds offers you a good choice and you can rest easy knowing you've put your money toward one of the great mobile businesses in the city.
Other thoughts:
1. I was pleased to see that they had all recyclable food containers, though it would be nice to see a container that could close to prevent winter's icy grip from stealing the toasty goodness from my spud.
2. I was told after I ate that my spud was not totally fresh, which in retrospect I guess I noticed, but I have never been a skins kind of gal, and the meat of the potato was perfectly done. If you do care about eating the skin in addition to the meat of the potato (and my, you have a stomach of great capacity), check to make sure it's a fresh spud!
3. Can't wait to get back and try some of the classic potatos!
