I've eaten here quite a few times and going up to the window to place your order and watch the guy cut the steak is a bit gimmicky but its also kinda fun. Never had a bad meal, everyone who works there seems to be helpful and always attentive. We prefer to eat in the "library" which is next to the main dining area and a little quieter. Salad bar is tasty and since you pull the bread out of the warmer its always nice and hot. If you are not familiar with the area it is a very nice town with beautiful homes and next to the water. The restaurant is only a block or so from the Navesink River and its a nice place for a walk after a tasty meal. Its not a slick Manhattan type steak house but more of a nice neighborhood steak place for all to enjoy and pleasant evening. I could see how some pretentious folks might not like the semi self serve concept but its also different and it makes the place unique
Review Source:Went to WYB tonight and the prime rib was decent but not worth the price. $23.95 for the meat and $2 for a baked spud. Â Sorry no value there at all. Â Our other main was stuffed flounder for $21.95 plus another $2 spud. Fish was fishy tasting with pasty stuffing and not good. Bottom line w/ three glasses of house wine plus tax and tip coming in at $96 this place has lost its edge and is no longer recommended. Â It is simply an over priced restaurant from a bygone era.

Â Pretty casual, comfortable and quiet atmosphere. Â You won't go wrong here, but it can get pricey. Â Probably about $25 a dish plus additional for your side dish. Â I would rate it a 5 but I think I hold back due to the prices and the decor. Â It needs an overhaul. Â The floor gives off a dirty feel. You can't go wrong when it comes to the food. Review Source:this place needs a serious upgrade. The place is too crowded, bathrooms dirty,needs a paint job. The prime rib was  tough and chewy. The drinks are over priced and small. Â The steak was cooked perfect to my requested temperature but the steaks had no seasoning it seemed... Â Same as if I bought a steak and threw it on a grill! Â Ended up salting and peppering on my own and throwing some butter on.
The salad bar was decent but nothing special aside from the nice bacon strips broken into pieces for you. Â The fresh bread in the bread drawer was warm and ok. Â

A low key neighborhood steak house. Somewhere to go with the family (as long as the children are well mannered). Small bar for a drink after dinner. Great salad bar and a bread warmer filled with pumpernickel. The steak is excellent and you know what you're eating since you have to order by the ounce up at the butcher counter. Fantastic seafood, so there's other options if you're not feeling for red meat.
It's an old restaurant. The decor is old. The wait staff is even older than that. But it feels kind of homey and the service is great. I've been here a few time already and will hopefully be going again in the near future.
What's your beef is an old school steakhouse...great cocktails...great cheese spread and crackers all around the bar...the old school salad bar...and the steaks are cut and cooked to your liking...
If you want something "new hip and modern" WHAT'S YOUR BEEF is not for you...it is old just like the locals like it...we don't want it to change...
What's Your Beef is one of those places that I had always heard of and wanted to try, so I was excited when it was suggested for a family dinner for my boyfriend's birthday. Â It really is a neat concept - you go up to a butcher and order your meat, they cut it in front of you, and it is later served at your table cooked to your specifications. Â
Be prepared to eat quite a bit of food. Â Even the smallest portion of Filet Mignon was too much for me after eating a delicious salad and paired it with a baked potato. Â
Special little charms such as homemade butter (I think) and warm bread make this rustic restaurant a unique place to dine.
My recommendation is to try it once. Â For me, it isn't a must-go-to on a regular basis, but it is a fun-every-once-in-a-while restaurant when you're in the mood for something beefy.
This place was good, but it was just too much food! I hate the fact you have to get a minimum order of beef - I can't eat that much and don't want to spend too much for what I'm not eating. But, I can't fault the chefs because they did make a tasty meal.
Salad bar was quick and easy and the waitress was very kind. We will be back.
My family and I consistently have gotten great meals at this place over the past 40+ years -- the best steaks I've ever had have been here. Â To those who've never been: It is a local place, with an ordering style which is a little unique: the waitress takes your drink order, directs you to the salad bar, and brings drinks and your meal as those come ready. Â You order your entree directly from the chef at a window, when you're ready. Â You see the cut of meat and it's cut to your order in front of you by the chef. Â Some people may be put off by this ordering process, possibly considering it "self-serve" -- to those I would suggest going to Outback or Lone Star instead. Â When your steak arrives, it is piping hot and, more importantly, cooked exactly to order -- always. Â The salad bar is all-you-can eat, and the desserts are fantastic. Â The waitstfaff are friendly and attentive, and work as a team, i.e. you don't have to wait for "your" waitress to ask for a refill, etc. Â The woman whom I believe to be the owner personally oversees the wine list, and takes an active interest in the business and her customers. Â The decor is quaint, the library-style reminscent of the old Charlie Brown's in Tinton Falls or old Lock, Stock n' Barrel in Fair Haven, but is augmented with decorations of the season. Â
If you're looking for the best steaks done to perfection: go here. Â If you're looking for a false bargain, gimmicky chain restaurant stuff, or just can't handle having to get up from your seat one extra time to give your order to directly to the chef: respectfully -- go somehwere else.
As soon as you step into What's Your Beef, one if the first things that will probably catch your attention is the antique Old-World charm and history that is permeating the patina of its walls and tin ceiling. Â
Certainly, it's got a lot of "flair" that establishments such as TGIFridays and such strive to replicate in true suburban strip-mall fashion, but this place pulls it off with an element of hard-earned legitimacy. Â I'm a sucker for steak houses that give the impression that they've been there so long that even the walls themselves are marinated in A1, so maybe I'm biased. But this place has a timeless quality to it that I simply cannot find anywhere else.
The staff are always extremely nice and welcoming. They might not know us by name (well, some of them do), but every one of them comes over to check out how much our children have grown since our last visit. It's comforting having a sense of familiarity and service that can't be easily replaced by some know-it-all college kid who's just trying to make enough to help pay for Spring Break. Â
These, of course, are all great things, but I know you came here for the food, not just the emotional support and comfort. So moving on...
The salad bar is simply unrivaled, as you could probably end your meal at that and leave satisfied. But the scent of the grill challenges you to indulge even more...of course I always willingly accept this feeble dare.
The menu itself has it's consistent hits of steaks cut to order mixed with about ten to fifteen specials comprised of poultry, seafood, lamb, etc. Of course I haven't tried everything, but one of my favorites is the seafood platter.
Once you're finished, I urge you to have a nightcap at the bar. You'll probably engorge yourself with the cheese and crackers that are out for the taking. I challenge you.
Consistently good. Â This place is a local staple that hasn't improved or updated it's atmosphere since I went here 25 years ago. Â The salad bar is awesome, and the steaks are tasty. Â They serve a pretty good selection of draft beer, and the severice is ok. Â They really need to update the interior, though.

I grew up in the area and just dined here for the first time a few weeks ago. My husband brought my mom here a year ago to share his plans to propose (cute - he took my mom here) - but when the three of us went together, I wasn't all that wowed.
The food itself - really great. I loved being able to see the meat prep from our table and take a look at the different cuts in the butcher case. It's definitely a different dining experience than I'm used to. The steaks were perfectly cooked to order and the sides are delicious.
Three complaints:
1) We were seated next to a table of 10 that had a (albeit, happily) screaming child - disrupting the immediate tables in the vicinity. Parents should have been addressed by the waitstaff. These aren't Red Lobster prices and I wanted to enjoy my meal without rupturing an eardrum. The parents could tell the kid was disrupting and did nothing to address it.
2) I ordered a baked potato side - and dressed it with the condiment tray. Two minutes after the condiments rounded the table, the waitress picked them up though we hadn't finished our meal. When I asked for more dressings, she came and dumped some on my potato and did not let me dress my own. Really? No, I did not want that much sour cream. I'm lactose intolerant. Too late now. Was this their idea of good service or too cheap to allow two spoons of chives? Not sure. Either way, it was awkward.
3) For the love of god, STOP using your carpet sweeper during dinner service. I love a clean floor as much as the next OCD-30 year old, but yours is loud as all get out.
I had dinner here on Thursday night with my wife and in-laws. Â It's definitely an "old school" look, feel and experience. Â The bar is nice... they put out cheese and crackers and the drinks are reasonable. Â I ordered a martini and liked the fact that it didn't come served in a 55 gallon drum which seems to be the norm. Â
Salad bar is nice and steaks are a la carte. Â I had the sirloin which was good and mushrooms on the side. Â we also had crabcakes which were good, so there are alternatives for those who don't eat meat. Â
it's kind of dark inside and the wait staff has been there since the US hostages were realeased in Iran... It's a decent experience, but nothing like what you'll get from the better steakhouses in NYC, but then again, you shouldn't be expecting that anyway.
This long time landmark in Rumson serves good food at fair prices and has a great salad bar included. There is a unique serving style here. You go up to a window by the kitchen to place your order and the wait person delivers the food to your table. They have a full bar. This is a nice comfy place to kick back and enjoy your meal.

Â We were restaurant hunting and came in with a party of 8 at the last minute, and even though they were crowded on a Saturday night they immediately had a table set up for us with water already poured which we were very grateful for on this hottest day of the year (yesterday). Â The format is fun, and you don't have to wait for a server except to order your drinks and bring your food. Â You simply go to the salad bar whenever you want (chilled plates, fresh bacon, and anchovies were the highlights for me), and go up to the meat counter to order your entree -- they cut your steak right off of the slab -- and then the waitress will bring it to you when done.
Service was friendly; noise level was low, even though it was crowded. Â Another fun part is that the bread is kept in a warming drawer and you cut it yourself whenever you want. Â Also, the salad bar is all you can eat.
A great experience all around.
Yes the steaks are great, surfANDturf always a nice touch, but let's not overlook the salad bar, the cheese and crackers at the bar, and numero uno on la lista....THE BURGERS...
When I'm home at my folks, which is just maybe 2 blocks away(less if you use the back exit onto river rd...)...I go for take out on the burgers,,,,and a salad bar to boot...
I don't like to fight the crowds, but I don't mind just walking by them and going my merry way...
Just remember when you're in the town of Rumson(established 1642?92?)...obey the speed limit, or the local police will have you pulled over faster than spider's dad when he was making him...
What's Your Beef is a very nice steakhouse in Rumson.
You order your meat by the pound, and the butcher cuts of your steak right in front of you from the beef sub-primal.
The salad bar and fresh warm bread are good and the meat is excellent. I've eaten at What's Your Beef several times and have never left disappointed.
Drinks are also generous and good.
This one of a kind restaurant is definitely worth trying if you are in the area.

For years, my family lived in Rumson and many a time, we dined at WYB. As the name implies, this place is known for its steaks. One can order either filet mignon, NY sirloin, rib-eye, or prime-rib. Â Undoubtedly, one's steak is prepared to one's satisfaction. Â The steaks themselves are flavorful and appetizing. For non-steak options, WYB offers, among other options, shrimp teriyaki, swordfish, lobster tails, lamb chop and broiled flounder.
For a nice meal with friends or family, I definitely recommend going to WYB. I doubt one will lament it.
Yes this restaurant is good. You Walk in the place looks like a Library.... and the seating is cozy with a fire place and a nice bar. I went around the holidays and it was all done up with decorations... The best part is the meat however... Walk up to the counter tell them what you want they show you the uncut steak..... You tell them how thick and how you want it trimmed and cooked. Then tell them your sides sit and have a drink.... all your fresh food will be along shortly....... Definitely well cooked steak and you will pay for that kind of service..... Reminds me of another place that looks like a library........
Anyway, the food is all ala carte and it ain't cheap so bring your wallet! But worth a look and taste? hell yes! go on a special occasion!
