Rocky Mountain Chili Bowl

Born and raised in TX - we both have extremely high standards when it comes to chili. My GF loved the green Chili - it's amazing. I had the # 3 and added ground beef - recommended by Matt the owner (very personable dude, made the experience) and BOOM it blew me away. I definitely recommend RMCB.

RMC, so from all appearances this place is odd. It has a big name, it's in a weirdly designed parking lot in a sort of awkward area of town. I say awkward b/c Stapleton isn't known for their Hipster community and this place is a Hipsters wet dream. However, their little bowls are pretty good! It's like going to a less calorie packed version of a big burrito place. Prices are reasonable and only offering a limited number of things they're able to specialize on it. Their layout is still that of fast food and it sucks holy balls when it's cold and someone opens the door but it's a great little place and I'll for sure be back.

I've only been here once, so take it with a grain of salt. I got the purist bowl of pork green chili and thought it had the right amount of heat; not too soupy or stewy, just right; and a good flavor.
