    I've been shopping at Deby's Bakery for about five years, first when I lived nearby and now whenever I'm in the neighborhood.  They have so many gluten-free options that are so tasty and nutritious that you can easily forget they are gluten-free.  

    My favorites are their tortillas (I buy them by the case!), pizza shells, breads, flour, and delicious sweets that those of us who are both lactose AND gluten-free seldom experience.  And everyone is very friendly and efficient.

    I hope to make it down there sometime on a Saturday morning, when they have many special freshly-baked goods to enjoy on the spot or take home, and, I noticed, everything is 10% off.

    We have been meaning to stop by Deby's for a while now, but it's not very close to home so we put it off for a while. Now I'm wondering why it took us so long! We stopped by in the middle of the afternoon on a Monday, and were greeted by Monica, who immediately guessed that it was our first time in the store. She proceeded to not only guide us through her products, but to take the time to explain how the flour and bread stabilizers work together.

    As for the products: I've been looking for a long time now for a good GF all-purpose flour that doesn't cost $10 per pound, and Deby's delivered! I used it to make buttermilk biscuits (using my standard recipe) and they were so good that we had a moment of silence at the table to honor them. My husband also got a cinnamon roll and some danishes, for when he's feeling sweets-deprived. I'll be back to try the tortilla mix. The frozen tortillas made a pretty decent breakfast burrito.

    I am really grateful that this place exists! I also want Monica to teach me everything she knows about baking gluten free.  :-)

    Everything about Deby's Gluten Free Bakery makes me smile. The second I stepped through the door the sweet smell of freshly baked bread tickled my nose. After browsing around in awe at the countless gluten free options I started talking to woman wearing an apron that was lightly dusted with flour. Her welcoming charm and friendly demeanor will make anyone's day better.

    She showed me around the bakery and explained how all of the baked goods were completely guaranteed gluten free. Not only that, but all of the products, even the teas, were safe.  Anyone who has Celiac disease knows how difficult it can be to find gluten free foods, let alone a good loaf of gluten free bread. After we chatted, I began to browse some more, finding myself completely enamored with the bliss in which I was faced.

    Finally, after gathering all of my goodies I paid for my bill and introduced myself. In response I found out that the charming down-to-earth woman was the owner of this amazing company. The love and passion that she has for baking and cooking is unyielding. If you are looking for something delicious to take home, (gluten free or not), Deby's is where you need to shop. Even if you don't lead a gluten free lifestyle, the purity of the ingredients used in their food will make anyone's taste buds tingle.

    I found my heaven on Earth at Deby's Gluten Free Bakery.

    There they were. Perfectly delicious, beautifully-crispy GLUTEN-FREE DONUTS!!! Hello?! FRESH. GLUTEN FREE. DONUTS. Please understand, you can't comprehend this level of excitement unless you also have celiac or gluten sensitivities. This is kind of a big deal.

    We shared a maple-covered donut. Chewy, crispy goodness. And then a bacon-apple (yeah, you read that right) fritter, also dipped in maple glaze. Also good. To bring home, I went with a cinnamon bun with maple or regular glaze. I get a little hazy on taste here and this is why... The first bite is Heaven. The second, like floating on a cotton candy cloud. By your third bite, your teeth hurt. And by the fourth and fifth (if you last that long), you've developed Diabetes.

    A lot of people with autoimmune disorders like Celiac also tend to have other autoimmune issues running around in the family. Say for example, Hashimoto's or Thyroid Disease or Type 1 Diabetes. Eating this would not be the best thing for you. And I know you can't please everyone but hot damn, I wanted gluten-free delicious, not insulin dependence. I was in a sugar coma and I didn't even finish my palm-sized fritter. It was painful!

    I left with mixed reviews. I'm glad to have found this place (FRESH GLUTEN-FREE DONUTS) but it was just so sugary that a few bites was my limit. I was going to buy some bread but the sample I tried was a little too chewy and smelled... Off. We were also given the run-around because for a few months, they were out of a certain flour. When we finally showed up that beautiful Saturday, we found out their donuts won't be ready until a few hours after they opened (would have been helpful to know).

    So, overall. I'm still mixed. I may give them a second try to figure out how I really feel. For now, all I can recall is spending $3-4 on a cinnamon bun that went in the trash as soon as I realized how @&*(#^$ coma-inducing the sugar levels were. However, there are many who love, love, love Deby's so they must be doing something right I'll hope to find out for next time.

    I ventured into Deby's with a friend of mine who must remain gluten free. We we received a warm greeting from Monica, who is Deby's mother. She was extremely knowledgeable and helpful without being pushy. I was impressed! I was disappointed to not see any pizza available. When I expressed this to Monica, she asked me cheese or pepperoni, and then proceeded to the bakery area to make my pizzas...how's that for great customer service?! I bought a loaf of white bread, dinner rolls, breakfast burrito, and brownie. Every item has been scrumptious! It's to bad the cafe isn't open for breakfast and lunch-I bet the foods would be just as tasty! Their prices are competitive with other places selling GF items. I highly recommend giving Deby's a visit.

    I love this place! However, they are a bit expensive   (which is to be expected with gluten-free items) and, for the love of God and all his glory, avoid the hotdog buns...they're dry and lack the consistency to stay together. Other than that, eat your heart out!

    Hands down THE best cheesecake anywhere on the Planet... Light AND delicious ;0) Vitamin Cottage will special order the pies for you, as they do sell out quickly.

    After being at this for some time and being a celiac, I know we have far better options out there.  A stop at Wholes and Udis will yield much better selection and option for you

    If you're not local, be careful of ordering your gluten-free products here. Customer service is weak.. I ordered cupcakes for a birthday last year and they didn't arrive on time - reportedly the shipper's error - so I used the credit for a repeat attempt for my daughter's birthday this year. I attempted to use it for several different holidays over the year, but each time I called I was told "We're busy, can you call back?" and so it stayed on the books until her next birthday rolled around.

    It took 4 phone calls to get the order right - first the credit amount, and the date, and the address, had to be respecified as I checked and rechecked to be sure the order would arrive on time. The order did arrive on time, however the shipping charges cost as much as the food, and more than the entire credit for the previous year!  Not only was this way more than last year - they changed shippers - but it was never disclosed in any of the 4 phone calls. Had I known at the outset that it had become so costly to order from them, there would have been plenty of time to plan to bake my own, and use the credit  more economically on something that could be shipped by ground.

    I can only assume the cupcakes don't hold up to freezing well - although they claim they are always frozen, so in fact there was no point in overnight shipping for  the sake of freshness - because they were crumbly and fell apart .  

    I'm hoping the cookie dough we ordered works out better. And I added the 2nd star because last year, the owner shared with me the flour recipe and instructions to whip up last minute cookies to save the birthday party - they were great.

    I'll update after we taste the cookie dough.

    2/20/10 - Well, the cookie dough did make some very good cookies.

    For anybody who's a celiac this place is a no-brainer.  You are going to have to try it.  No ifs, ands or buts.  Just go.  It's in a wierd little industrial park in a part of town you've never had a reason to visit before now.  It's hard to find and it has very little signage.

    Until you're through the front door, you'll be doubting there could even be a restaurant anywhere around there, and second guessing your directions, thinking it must be on the other side of Iliff where the shopping center is.  "Hmm, didn't this used to be the recording studio the guy from Big Foot Torso worked at?"  ...But find it you must, because you can never eat at any of those glutenous delis, bakeries, and some intriguing little place that shares the same name as a dead Phillippine ex-president.

    You'll either want to buy your celiac-able groceries at Deby's, eat a rare have-no-fear restaurant breakfast there, or just bask in the cool ambience of the buzzing and whirring wall of freezers next to the register on a hot summer's day.  It's Denver's "mecca" of no-gluten fun.

    "Mecca's" even got French Toast...and it's damn good!  If you've read any gluten-free cookbooks you're probably aware of the magic combination of rice, tapioca, and potato "flours".  Deby's has tinkered with these and several other more complicated combinations of gluten-free ingredients and has come up with gluten-free versions of everything from tortillas to pizza dough (Beau-Jo's and several other pizza places featuring gluten free dough get it from Deby's).  There are mixes you can take home and bake with or plenty of bakery and deli products ready made.  They've even got cinnamon rolls!

    We celiacs often become sad and bitter when reminiscing about the good ol' days when we could just go ahead and eat a Cinnabon and be blissfully unaware that a serious health emergency was actually taking place afterward.  "Oh boy, " we'd speculate, "these stomach problems I'm suffering after eating that cinnamon roll must have just hit me because of all that butter and cream...it was just a tad too rich and maybe a bit more sugar than I should have had and it gave me a tummy ache, but oh how tasty it was so I guess it was still worth it."  Yeah, right.  It was the evil wheat-of-death and now we know it, which sort of makes those tasty Cinnabons not worth it anymore.  Now I have to admit, the cinnamon rolls at Deby's aren't quite as decadent and melt in your mouth as the death rolls but the trade-off healthwise makes 'em worth the switch.  I think if more people shop at Deby's, buy their products and patronize their cafe it will fuel their ongoing advanced research efforts at developing the ultimate gluten-free cinnamon roll.  I think of it as the holy-grail of gluten free baking.

    Well, then there's fluffy flaky pastries...and baguettes...and...  Okay, so maybe the gluten free industry still has it's R&D work cut out for it.  Venture capital, anyone?

    Back to the French Toast:  It's fantastic.  They make it on cinnamon bread which makes it even better than most restaurants' French Toast.  It made me so happy that I even ordered some eggs and hash.  Pure diner decadence.  Good coffee, too.  Roll me out of here - it's like I'm at Mel's Diner on Geary Street with a young, pimply faced George Lucas, fresh out of film school getting some American Graffitti location shots, only this time without the reflux and other ...well...um... unpleasantness afterward!  Trust me folks, if you aren't a celiac, you don't want to know.  And if George Lucas was a celiac, lived in Denver, and needed some French Toast for breakfast, you bet your sweet bippy he'd end up at Deby's.

    The cafe is usually pretty busy and since they're actually better equipped for their main line of business (which is running a large gluten free wholesale bakery for clients like Sysco Foods, King Soopers, and many restaurants) sometimes the activity between the cafe and the kitchen gets a bit chaotic.

    Sometimes the food doesn't arrive as fast as it should, sometimes you have to ask for something twice, or maybe you overheard somebody at the register say something to the cook in a tone of voice that you might not expect in one of those serene downtown brunch spots next to bike paths and babbling brooks.  Remember, you're in a factory, and be patient.  We're very lucky to have an entire cafe devoted to serving good food that is all guaranteed to be gluten-free celiac-friendly cuisine.
