Nestled in the Nulu district in Louisville Mayan Cafe made me want to pack my bags and move south. It's hard to classify this place because it's not fusion but it's extremely creative. Â My bf and I split two appetizers to start, the perfectly balanced shrimp ceviche and papadzule. The papadzule was insane!!! Smoked chicken inside of tortillas with a creamy sauce and topped with a poached egg.
For entree with shared the chicken thighs and the rabbit. While the chicken thighs were perfectly crispy the tamarind sauce on the rabbit was bright and stole the show. Our sever forget to bring our order of the house special the lima beans so we packed them to go. While I was so full to have more than a tiny bite I can see why they're the stand out dish. Who knew the lowly lima could be elevated with garlic, green onion and lime.
I can see why this place is so popular and I will definitely be back on my next trip to Louisville.
