So, I've had baked goods from Mermaids a few times. The pie was amazing -- just like the pies you would find in your grandma's kitchen. I have yet to have a better pie in this area.
That being said, the "filled" cupcakes are some of the worst cupcakes I've ever had. The filling was basically one bite of frosting textured filling in the middle, the frosting on top was bland (could barely tell the difference between buttercream, cream cheese and lemon), and the cake itself was greasy. We threw the cupcakes away.
So, Pie YES, Cake/Cupcakes NO.
Mermaids bakery is a gem among semi-precious stones in Denver's cake and cupcake industry. It is carefully run by an owner who refuses to cut corners, whether it comes to ingredients or customer service. Other Denver cake and cupcake shops cut costs by substituting shortening for butter or using chemical-filled mixes while still charging high-end prices. Others use high-quality ingredients, but offer up dry cake or just don't take the time to make meringue butter cream. Like I said, mermaids is the exception. They make real-butter Swiss buttercream (a light and fluffy distant cousin to the greasy, ultra-sweet version of american buttercream you're probably used to) and flavorful moist cake. They also make amazing gluten free cakes that my mother - who is celiac - absolutely loves! Don't waste your money on chemical imitations of what a cake should be. Go to Mermaids instead!
