    We enjoyed every bite of the tuna salad and avocado lox sandwich paired with a blueberry chai tea.  Everything tasted fresh and healthy.  I will definitely be going back.

    Such great smoothies! Blueberry bliss was delicious - especially with its unique flavors of chai tea and mint.  They have the real deal fresh juicing combos too. I felt healthy just standing in there. Will be back to try all of their wonderful soups and sandwiches soon.

    Absolutely wonderful! I've eaten here several times and I've enjoyed every thing.  The portions are just right; largest enough to kill your appetite, but not so large that you feel stuffed or full afterward.  Drinks are also very good.  Prices are slightly higher than average, but I've never thought I was paying too much (especially since they are a local, independent shop using fresh and local ingredients).

    Again, fellow Yelpers brought me to a wonderful place.  Met my son, daughter-in-law and a couple of their friends here.  Everyone loved their food and drinks.  Everything seems well thought out.  I had the lox/guacamole sandwich with the white (with bluberries in it!)  Most others had salads and smoothies and everyone was pleased.  I took 1/2 my sandwich home and had for dinner.  It was one of the best sandwiches I've ever had.

    On the hunt for a delicious yet substantial smoothie, Yelp led me to Parsley. And I couldn't be happier with the Denver community exposing me to such unique local business. At first, I just had smoothie on the brain, but much more was brought to the table when I entered this modest, adorable business in the Golden Triangle.

    Starting with the smoothie selections, they do a particularly good job at implementing organic and as healthy-for-you ingredients as they can. We are talking organic yogurt or soy milk and little to no sugar. Though not an overload of choices, they are all solid and drool inducing. The best part, of course, was finally taking that first delectable sip after such an intense decision process. Did I want the blueberry bliss with or with out the yogurt. Oye vay - life can be so hard sometimes.

    One aspect of this business that certainly inspired a curious customer out of me was their dedicated and clear 'stick it to the man' message. In fact, there is a reward policy at their business if you cut up your AMEX. They have a sign explaining there are scissors set aside should you feel the need to protest the 'perfect example of predatory capitalism.' Synonymous in their vehemency to defend small businesses, they are passionate about the environment - serving all their food and drinks in eco-friendly materials and displaying signs encouraging to not overdo it on napkins (as I am guilty of often doing). The smoothie was perfect and hearty and after taking a bite out of the boyfriend's sandwich, I'll be back for more.

    The food and drinks were good, but the service was pretty bad.  I ordered something without onions.  It arrived with onions, so I took it back to the counter and asked them to correct it.  The employee opened the sandwich, scraped off the onions, put the bread back together, and returned the plate to me.  No thanks.

    I like the sandwiches and soups better than the salads, although I've really liked everything I've tried, with the exception of the hummus.  

    I wish that the hot soups were available in the summer.  Only gazpacho is available in the summer.

    I usually get a sandwich, and I always get the sandwiches on the ciabatta.  My favorite sandwiches are the fig and brie; the turkey, fig, and brie; the Cherokee minus the chipotle sauce (turkey with roasted green chili); and the lox and guacamole.  The sandwiches are a little pricey and don't come with fruit or chips, but are really tasty.  

    The cashiers are friendly, but the people making the food are sometimes a little or a lot aloof (no eye contact or smile and sometimes not even a word that my order is ready), not a big deal, but just a little odd.   Also a little odd that you can't call in an individual lunch order.

    I had the texture tuna and it was delicious! It was kinda spicy but I really like. It was very flavorful. I ordered the broccoli cheddar soup that I didn't care for. The best part was the peach smoothie. Sooo good! I'm definitely gonna come back!

    I love Parsley. I wish they were next door to my house and open 24 hours.... but it's probably best for everyone that that's not the case. I absolutely love the Texture Tuna sandwich. It's the best tuna I've had.... maybe ever? Other tuna salads have way too much mayonnaise or the tuna tastes old or there's chunks of celery. This tuna I cannot recreate at home and is consistently delicious. I feel like they're starting to recognize me there, or maybe it's just the fact that everyone that works there is very friendly and extremely fast. The smoothies are fresh and delicious and refreshing. I am also fond that they leave water pitchers out, because I am often not hydrated enough and it's kind of them to remind me.

    I haven't had other things, but they have fresh homemade soups every day and mostly (if not all) organic ingredients. They also have a juice bar that looks pretty tasty.

    While I love the soup here, I can't imagine why somebody should pay $6 for a tiny cup of soup. Also not a huge fan of the ego here. They've found a way to make soup pretentious. Great soup, but not worth the price or the attitude.

    I had a Fig and Brie sammich here once, which was quite good, but the $ sammich is their Texture Tuna - one of the finest tunas I've ever eaten. It's spicy (but not too spicy), filling and much tastier than your average tuna. The smoothies I've had are also top-notch. They have unique flavors like: Chai Banana and Chai Blueberry, both of which are quite good, but their standard Peach and Mango flavors also taste quite fresh. The service here is always very friendly and reasonably quick.

    I will never get tired of Parsley!

    I have lunch here at least once a week and have never had a bad experience. The food is amazing-- everything is organic and very fresh. The caprese salad and sandwich are so good! All of the employees are super nice and quick too.

    Stopped by for a couple of fresh juices the other day and they were delicious!! I'm happy that this place isn't too far from my apartment because I can't wait to go back and try a smoothie or have lunch!

    I'm a little bummed that there aren't more fresh juice places in Denver... guess its more of an LA thing.

    Just moved to the Golden Triangle area couple months but finally made it to Parsley. I picked up a half 'turkey and fig' sandwich to go. The ciabatta had a perfect bite on the outside, nice n chewy on the inside. Fig spread gave the sandwich a nice, sweet, gooey touch to the creamy brie cheese. The lettuce and spinach was fresh, crisp and just enough to go with the turkey, fig, and brie. Absolutely loved this combo! You can't buy freshness like the quality of the ingredients at Parsley. I am coming back to try all the other sandwiches, soups, drinks.

    If I owned a restaurant this is what it would be.

    Simple, healthy, delicious, and vegetarian friendly!

    I had such a great sandwich and they were kind enough to make an avocado sandwich for my daughter. They were super friendly. I really wanna come back.

    Here are my needs improvement list:

    Wanted to get one of their soups, but they don't serve them in the summer. This is an easy fix...just adjust this on your website, which is where I saw your menu.

    Get highchairs and booster seats...I probably won't go back unless I know they have a highchair it's just to difficult to eat lunch and worry that my toddler will fall off the chair.

    I wanted to love this place.  A locally owned place serving mostly organic fare primarily geared towards veggies.  Parts I did love: the inside was welcoming and the staff was very friendly.  The knock on stars was for my extremely lackluster smoothie.  I really should have turned around after leaving, marched back in and asked for another one.  The ice was still in large enough chunks to obstruct the straw....it's called a smooth-ie for a reason.  Maybe they need to provide instructions for all employees on techniques of a proper smoothie.  When you pay near $7.00 for something you can make at home for $1, you expect something great in quality, not fair to poor.  Hope this place makes it and perfects the smoothie technique.

    Yum! How can you not love a great local business offering healthy, sustainable, and local ingredients on a interesting menu?  You can't.  Parsley is great for a quick lunch in the area or to just grab something, lunch, tea, smoothie, quick to-go.

    I shared a sandwich and a salad with my mom when we met in the area for a quick lunch on a weekday.  It can get pretty busy around the lunch hour, but fear not, they move quick and our order was up in less than 5 minutes.  The salad, with walnutsm and goat cheese, was tasty, but seemed to be a bit overloaded with the nuts.  The dressing was great though! Our sandwich, the Red Pepper Turkey, was also super yummy.  The tomato pesto and the sweet red peppers were great.

    The biggest winner for me though was the Iced Tea. I know, I know, Tea?  But the green tea was so refreshing and brewed perfectly.  I could live off of that tea.

    Most delicious fresh and organic veggies in a sandwich eva!!! The ciabatta bread is perfect, never too hard. The gazpacho soup is killer. Aaand the smoothies! Are the best in town, hands down. The people are great too :) Staff is always super cool, friendly, and efficient. I can't pick a favorite sandwich, cuz they're all so good, seriously!

    They use the same Nutrifaster juicer that jamba juice does. I didn't like their agave sweetened mango drink. Reading up on agave I'm surprised they actually use it considering it isn't healthy at all. Raw honey would be healthier (through granted, a lot more viscous) and I'm sure there's some other natural sweetener options they could use instead. I would get it again minus the agave.

    I also got a Kim's Green drink of some sort and they very kindly added beet juice at my request. Both together were $12, and I think I got both of the large sizes (which aren't very large but I didn't have a problem with it.) I liked the neighborhood and could see myself coming occasionally if I lived around here.

    I do kind of wish they had crushed ice instead of ice cubes.

    I cannot rave about this place enough - if I don't stop here AT LEAST once a week, I feel at a loss for healthy eating in my routine. I'm overly obsessed with the Gazpacho - it is by far THE best recipe I've ever tasted and I'm constantly buying as much as possible and hoarding it at home.

    Love that they have wi-fi and don't mind me using a corner table for my office now and again. :-)

    I've been here a couple of times for lunch, and it's always a steady choice. The fig & brie sandwich is by far my favorite, but the Acadia is another tasty veggie option. I haven't had their wheat bread yet, but the ciabatta is fantastic - no reason to stray from it at all!

    My favorite lunch spot! Be prepared for the weekday lunch crowd.. There can be quite a line sometimes, but that doesn't stop anyone from waiting.

    Parsley serves up my favorite sandwich, the tomato turkey on a big piece of ciabatta bread (the half of sandwich is quite large). Everything here is so fresh and organic. The gazpacho is also fantastic. I haven't had any of the smoothies yet, but I love all of their teas. Lots of vegetarian options as well. Everyone I bring here falls in love :)

    I'm a juicer. I'm a recent convert (February), but I am in this for the long haul. As cliche' as it sounds, I've never felt healthier, and I cannot believe the amazing results it's had not only on my girlish figure, but my skin, hair, nails & even eye-whites are clear, vibrant and shining! It's like I've evolved from a state of living to a state of THRIVING.

    That being said, I've been searching Denver for convienent spots to get my juices to go when an inevitable time crunch procludes me from completing the insane amount of prep making my juice includes.

    I want to jump up and click my heels in celebratory joy because I discovered my juicy little niche! Parsley has about 11 different veggie-juice combos, but my fave is Kate's Kiss: organic parsley, spinach, celery, & carrot--a sweet and refeshing dose of nutrients!

    Also, if you like a healthy sammie, Parsely has got yo' back. I've tried several of their delicious combos & all are full of love. My favorite has to be the Turkey & Fig on the 7 Grain bread. The mere memory of the sweet croatian fig spread paired with the smokey-salt of roasted turkey and the creamy tang of brie is enough to make me randy.

    Apparently, they have really tasty salads too, but like I said, I'm there for the juice (& lustful sammies), so I haven't given them a go yet.

    The prices are fair for the quality of food, which is primarily organic and very fresh, so $5-$7 dollars for a fresh juice and $8 for a fantastic sandwich--FINE by me. I have no problem investing in my health.

    I also love the vibe of this place. With its open layout, cheerful green paint & bright window light, you'll want to stick around to let your happy little tummy digest in contentment.

    Stopped in here for lunch yesterday with some out-of-town guests, when one of them specifically requested "something healthy".  I'd been wanting to try this place for awhile, so I was excited to finally try it out.

    First, I had a cup of the gazpacho.  It was 90 degrees, so this cold soup hit the spot.  It was light and flavorful and delicious, with little chunks of avocado adding an element of creaminess.  Very good.

    I also had the turkey and red pepper sandwich, and it was super yummy.  Fresh and light, with the ciabatta lending the perfect amount of heartiness and chew.  My hubby got the Cherokee (as did the "healthy" requester), and they both really liked it.  Another person in our party got the Arcadia (which is meat-free), and as a meat-eater, he loved it!  There was also a smoothie involved that was proclaimed "really, really yummy."

    I also liked that they had big pitchers of water, and you can serve yourself before you sit down.  Someone also came around and asked if we wanted refills, while we were sitting, so that was a nice touch I think.

    All in all, this is a solid sandwich shop.  It's a little pricey (2 full sandwiches, 1 medium soup, and a bag of chips for $23), but if you're looking for a great sandwich and fresh, high-quality ingredients, look no further!

    Stopped by en route back to Denver airport after a weekend of snowboarding a few weeks ago.  We had the tomato/coconut soup, black bean soup, fig/brie/arugula sandwich, and the carrot/apple/ginger juice.  Everything was good, although the sandwich and the juice outshone the soups, which were slightly bland to my palate.  The fig/brie/arugula combo is classic and they executed it well.  Always a fan of fresh juice, and theirs was delicious.

    Definitely appreciated the attitude (very friendly) of the staff and the cute, understated ambiance of the restaurant.  If back in Denver, I'd definitely stop by here again.  Also, they're across the street from Metropolis, an excellent coffee shop that would be a perfect way to end a meal at Parsley!

    I was able to stop here on my way to the airport (from the mountains).  Yea, I was brutally sore from my first couple days of snowboarding, but I had a plane to catch and I was starving.  

    Looked on yelp for vegetarian friendly restaurants, and was impressed by this one.  Found it quickly (Denver is a small city after all) and thought it was very charming on the whole.

    They have some interesting sounding soups and you can get any soup as a 2 or 3 soup combo, so its cool to try a couple out.  I got the black bean soup and the tomato coconut soup.  While the black bean was spot on good, it took me some time to get acclaimed with the taste of the tomato coconut one;  It felt like two completely opposite forces fighting to dominate my tongue, but nothing substantial in the middle ground to keep me from being confused.

    Also got the fig and brie sandwich.  It was simple, but well executed.  And also a carrot smoothie was delicious.  

    Pretty much, you can go wrong here.  So just check it out.

    I have eaten here frequently when i am in the area, and find it to be a very acceptable place to eat.  I find that the prices are pretty high, but so is the quality of the sandwiches.  It does take quite a while to get a sandwich, which is a bit troubling from a sandwich shop, as who really goes for a nice long sit down sandwich lunch.  

    I find that the girls at the counter to be usually very friendly, but the manager/owner (don't know which he is) to be cold.

    As for the food, I really like the turkey fig and brie, and several of their smoothies.  They have a lox sandwich that is quite good as well.

    I will go back when convenient, but I wouldn't say it is a destination for me.

    Two words: The Cherokee. This sandwich is so delicious that it has ruined me on all other sandwiches! That and an apple/carrot juice and I'm all set for lunch and dinner (read, its a big sandwich!).

    When I'm not feeling in a bread mood I go for the texture tuna salad - so fresh and tasty! Add to that the carrot curry soup and you're stoked.

    Remember when you were goin' to school ya had to learn some of the timelines: the Paleozoic, the Mesozoic, the Yourassic? Well, I hear that 2010-2020 is being written up as the Age of the Sammies. Just look at the culinar-ical (?) data: Vert Kitchen; Masterpiece Deli, Spices Cafe, and now . . . Parsley's. All incontrovertible proof that the Sammie is the current crown of creation.

    At Parsley they've got some humdingers: the turkey and fig; the texture tuna, the cherokee. All wow and a half.

    Plus, they make their own delicious soups and fresh pressed juices and smoothies. The only things they're missing are an espresso bar and a baked goods section. If they had those, you could move right in and never have to leave.

    I have have a confession to make: I never had any interest in trying Parsley. Nor had I bothered to read any of the reviews on Yelp. Why? I had seen it labeled as, "Juice Bars & Smoothies, Vegetarian" and basically had no desire as I'm not a fan of smoothies. Imagine my surprise when I decided to take a peek inside after my appointment at Accent Beauty!

    Yes, Parsley has smoothies and juices made fresh when ordered, but they also have an extensive menu of soups, salads and sandwiches and they cater to everyone: vegans, vegetarians and omnis. I really liked how they list all the ingredients for their soups upfront, so customers know exactly what's in it without having to ask.

    I decided to order a half turkey, brie and fig sandwich with a small soup. I asked the woman at the counter what she'd suggest and she said the Carrot Curry soup would go nicely with the sandwich so that's what I ordered take home for lunch.

    The half sandwich is really a full size sandwich and it was wonderful. The woman's suggestion of the Carrot Curry soup was perfect. The flavors were delicious and paired nicely with my sandwich. I would have preferred my soup to be a bit thinner as it was more of a puree than soup, but that didn't stop me from eating all of it!

    It took me quite a while to visit Parsley, however it won't take me too long to return. I can see this becoming a regular weekend spot for takeout or to meet friends for lunch.

    Oh, I must say, these are some damn good sandwiches. It's small, doesn't overstate itself, and has that extra-friendly service that makes driving a couple extra blocks well-worth it.

    Some days happiness is super easy to obtain.

    1) Get yourself to Parsley.
    2) Order up a texture tuna salad or sandwich.
    3) Then choose a juice or smoothie.
    4) Sit down in the bright, open dining room and wait for everything to be delivered to you.
    5) Bask in the deliciousness.

    Oh, and they have wifi.

    I was very excited to try this place having operated organic juice bars across the country for over 12 years. I was very disappointed. First off, their ginger was not fresh?! (It was the kind you get at the grocery in a jar, only bigger). Secondly, they offer no soy / dairy free alternatives and when I asked about this I was treated fairly disrespectfully. Third, the drink itself took quite a long time to make despite the four or five people working there. I was not the only customer who waited a fair amount of time (even though there was no line). Lastly, their prices at the store were higher than on their website.

    Overall, I would suggest they correctly advertise their prices and also realize that people who are into getting juices regularly frequently have dietary concerns and coconut milk tends to be the least allergenic of all the milks. Also, why bother having agave in the smoothies when you add /cane juice sweetened/ soy milk and yogurt??

    After my honest review, the owner of Parsley replied quite aggressively . He states that he is a member of the service industry who is working hard to please people however instead of attempting to address my concerns, he attacked my character. That really lacks a professional demeanor and class.

    Local businesses work because of the rapport and trust you get from your community. Posting aggressive comments on a public forum does not aid in your cause. I have great compassion for any of the employees at Parsley who need to interact with this person.

    Lastly, I just wanted to mention to Parsley that running a juice bar and making it work, especially an all-organic one is not an easy thing to do but the industry standard has moved in a particular direction as more research has been done on which foods are better for people. Your target audience of repeat customers tends to be more conscious about what foods they put in their bodies. This means that not misleading us by serving us canned ginger under the guise of it being raw. This also means providing a nondairy non-soy option. Your competition both in Denver and in Boulder offer these things and have for years.

    I am just stating facts. I do not think you are a bad person (though one perhaps with anger management issues). I simply thing you have room to improve before you will deserve a higher rating from me.

    I totally heart Parsley. Megan and I stopped by here for lunch on my recent trip to Denver because it's close to her house and I had read such good things about the place. And the things I read most certainly didn't disappoint.

    The interior has a cute little café vibe where you order at the counter, find a seat and enjoy your lunch. Pretty no frills stuff. But, I think that's because they put all the frills into the food. Megs ordered a chai tea blueberry smoothie that was the definition of delicious. I know because she was nice enough to let me have some after sampling how good it was.

    I personally went with pinto bean soup and a hummus salad. The soup was fantastic - chuck full of beans, chiles, and lots of flavor. The salad was a bed of spinach topped with plenty of fresh veggies, a helping of hummus, and tortilla chips for dipping. I definitely recommend Parsley if you're looking for a light lunch, or just some really interesting takes on the classic soup, salad, sandwich lunch offerings. Plus, it's all organic.

    Perhaps the California living has altered my view of expensive, but I didn't think it was too bad. I ended up spending around $15 for a soup, salad, and drink here.

    I love some fresh juice and Parsley does it for me.  It's, unfortunately, in an inconvenient location for me.  I love the decor and I love the whole identity of the place.  It's pretty pricey.... 6$ + for a juice, albeit GOOD juice, seems like it's a little pricey.

    If I'm in the area and it's right around pay day, I'll probably splurge.  No free wifi, that may make me come back a few more times during my work day!

    Fresh, healthy, delicious. You feel good inside after you eat here. Perfect lunch locale.

    I wish Parsley was open on Sunday. Had the turkey with brie and fig spread sandwich yesterday. It's served on this fabulously fresh and tasty ciabatta bread. I loved it. Now it's all I want to eat today.

    Smoothies are also very delicious. Green chai tea with banana is my regular. It is mixed with soy milk, agave nectar, and almonds.

    This place also has a bunch of fresh juices. I haven't tried any....YET. But I'm interested in Kate's Kiss - it's a blend of kale, parsley, spinach and carrot juice. Something tells me this is the REAL green machine...not like Odawala and Naked Juice.

    It's a little pricey, but it is all organic and it is all goooood

    The almost completely organic menu at Parsley has 16 sandwiches to choose from, including 4 vegetarian sandwiches.  There are also a number of tasty sounding salads and a rotating soup or two of the day.  It's a bit pricey but I felt like I got what I paid for.  

    The ciabatta is delicious and made fresh each day, and they also carry Rudi's organic breads if you prefer a multi-grain bread.  They use Annie's Naturals and Newman's Own salad dressings and feature Applegate Farms organic and natural deli meats and Blue Moose hummus from Boulder.

    I had The Cherokee (Applegate turkey with chipotle aioli, pepper jack cheese, organic tomato or sun-dried tomatoes, roasted green chilies) but with roasted red peppers instead of the turkey and it was quite delicious!  My boyfriend had the Fig & Brie Turkey Sandwich and he enjoyed his as well.

    There's also a long list of fresh made juices and smoothies, so skip Jamba Juice and spend your money at a locally owned and operated shop that focuses on nourishing organic foods that are better for your body and the environment!

    The only small disappointment was that I would have gotten some soup but both soups that day were made with chicken broth and I'm a vegetarian.  I hope they start making a daily vegetarian soup, especially since it's so easy to swap out vegetable broth for chicken broth.  The two veggie soups in the rotation are Miso and Vegetable, but I'll have to report on how those are at another time.  Check out the menu online, you'll probably be drooling over it like I was!
